  • 2 ham hocks about 1 1/2 lbs, meaty
  • 1 pound White beans great northern or cannellini, dried
  • 1 quart chicken broth low-sodium
  • 1 quart water
  • 4 celery ribs chopped
  • 3 carrot sliced, small
  • 1 onion chopped, large
  • 3 garlic chopped, cloves
  • 12 thyme sprigs
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large slow cooker, combine the ham hocks, beans, broth, celery, carrots, onion, garlic and thyme sprigs. Cover and cook on low until the beans are tender, about 5 - 6 hours on low.
  2. Discard the thyme stems. Remove the ham hocks and shred the meaty parts; discard the skin, fat and bones. Return the ham back to the slow cooker and season with salt and pepper.

Notes

  • Use a mixture of chicken broth and water to control saltiness, seasoning further to taste after cooking.
  • Remove ham skin, fat, and bones after shredding to avoid greasy or tough bits.
  • Cook on low for 5-6 hours until beans are tender and flavors meld well.
