Ham and Cheese Croissant Breakfast Casserole

Ham and Cheese Croissant Breakfast Casserole blends cubes of flaky croissants into a rich custard with eggs, milk, seasonings, cheddar cheese, green onions, and diced ham. Baked until set and golden, the casserole offers layers of soft, savory custard with pockets of melted cheese and flavorful ham, making a hearty breakfast or brunch dish.

Description

This breakfast casserole begins by whisking eggs with whole milk, ground mustard, brown sugar, kosher salt, black pepper, ground nutmeg, shredded cheddar cheese, and sliced green onions. The mixture is combined with cubed croissants, which absorb the custard and create a tender, bread pudding-like texture.

The custard and croissant mixture is layered with diced cooked ham in a baking dish. After covering and baking to allow the casserole to set and the croissants to soften, the foil is removed to brown the top and finish cooking. The result is a creamy, cheesy dish with a contrast between the rich custard and savory ham.

This dish works well for large gatherings or weekend brunches and can be served with fresh fruit or simple greens.
