Ham and Cheese Drop Biscuits

Ham and Cheese Drop Biscuits combine a soft, slightly sticky biscuit dough with diced ham and finely diced cheddar cheese folded throughout. The dough is dropped by spoonfuls onto a baking sheet and baked until lightly browned, producing tender biscuits with savory chunks of ham and cheese. Seasonings including garlic powder, cayenne pepper, and salt add gentle depth. These biscuits are convenient for a savory side or snack, made without rolling or cutting dough.

Description

This recipe mixes all-purpose flour, baking powder and soda, salt, cayenne, and garlic powder, into a base dry mix. Cold butter is cut in until pea-sized pieces remain, providing flakiness after baking. Finely diced ham and cheddar cheese are stirred in before gradually adding milk to form a sticky dough. The dough consistency is softer than cookie dough but needs to hold shape when dropped by spoon. Drop the dough onto a parchment-lined or greased baking sheet in 12 portions. Baking at 400°F for 12 to 15 minutes results in lightly browned biscuits with a tender crumb texture and pockets of melted ham and cheese within.

These biscuits can be served alongside soups, salads, or as a quick savory snack. Their drop style makes them easy to prepare without special shaping or rolling, suitable for busy kitchens.

For best texture, the butter should be kept cold and cut into small pieces before mixing to maintain flakiness.

Ingredients

Servings
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon salt
  • teaspoon cayenne pepper
  • ¼ teaspoon garlic powder
  • cup butter cold
  • cup cheddar cheese finely diced
  • cup ham finely diced
  • 1 to 1 ¼ cup milk

Instructions

  1. Preheat oven to 400°F. Line a large baking sheet with parchment paper (or grease it well).
  2. Combine flour, baking powder, baking soda, salt, and garlic powder in a medium bowl. Whisk to combine.
  3. Add cold butter and cut in with a fork until the butter is the size of peas or slightly smaller. Add ham and cheese and stir.
  4. Add milk a bit at a time stirring after each addition until you make a dough that is sticky and can be dropped with a spoon. The dough should be a bit softer than cookie dough.
  5. Drop dough by heaping tablespoons to create 12 biscuits.
  6. Bake 12-15 minutes or lightly browned.

Notes

  • Cut the butter into pea-sized pieces to create flaky biscuit texture.
  • Using your hands is an effective way to cut in butter quickly.
