Ham and Egg Cups

Ham and Egg Cups combine slices of ham pressed into muffin tins, filled with shredded cheddar cheese and cracked eggs, then baked until the eggs set. Fresh diced tomatoes and chives finish these portable, protein-packed cups, perfect for breakfast or brunch.

Description

This recipe creates individual ham and egg cups by lining muffin wells with slices of ham, layering shredded cheddar cheese, then cracking an egg into each cup before seasoning with salt and pepper. The cups bake in the oven until the eggs are cooked to the desired doneness, resulting in a firm white and yolk that can be adjusted by baking time. Fresh tomatoes and sliced chives add brightness just before serving.

The ham acts as a natural cup that crisps slightly around the edges, holding the egg and cheese mixture neatly. Using round or oval ham slices helps them conform well to the muffin tin shape. Freshly shredded cheddar is recommended for smoother melting and better flavor compared to pre-shredded versions.

These egg cups are convenient for portioned breakfasts and can be served warm immediately. They offer a combination of savory ham and creamy egg filling enhanced by fresh garnishes.

Ingredients

Servings
  • 12 lices ham
  • 1 cup cheddar cheese shredded
  • 12 egg
  • salt to taste
  • black pepper to taste
  • 1/2 cup diced tomatoes
  • 1/4 cup chives thinly sliced
  • cooking spray

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Coat a 12 cup muffin tin with cooking spray.
  3. Press a slice of ham into each muffin well.
  4. Divide the cheese evenly among the cups.
  5. Crack an egg into each cup, then season with salt and pepper to taste.
  6. Bake for 13-15 minutes or until yolks are at desired level of doneness.
  7. Right before serving, top with tomatoes and chives.

Notes

  • Round or oval ham slices press best into muffin tins for stable cups.
  • Freshly shredded cheddar cheese melts more smoothly than pre-shredded varieties.
  • Avoid very thinly shaved deli ham as it may not hold shape well during baking.
