Description

Ham Bone Soup starts by simmering a leftover ham bone with water, whole black peppercorns, bay leaves, and garlic to develop a savory broth. The broth is cooked for several hours in a slow cooker or on the stovetop for depth of flavor. Separately, bacon is cooked until crisp and set aside. A mix of diced onion, celery, zucchini, carrots, and potato are sautéed in the bacon fat, adding additional layers to the soup.

After removing the ham bone from the broth, any remaining meat is shredded and added back into the soup along with the sautéed vegetables, crispy bacon, rinsed great northern beans, and herbs such as oregano, thyme, and parsley flakes. The soup continues cooking until the potatoes are tender, and seasonings are adjusted to taste. This combination provides a balance of smoky, savory, and earthy flavors with a variety of textures from beans, vegetables, and ham.

Broth:

  • 1 ham bone leftover
  • 7 cups water (1.5L)
  • 20 black peppercorns whole
  • 2 bay leaf
  • 4 cloves garlic , minced

Soup:

  • 5-6 lices Bacon
  • 1 small onion , diced
  • 2 ribs celery , chopped
  • 1 medium zucchini , chopped
  • 2 carrot peeled and diced
  • 1 russet potato , peeled and diced
  • 2 cans great northern beans , rinsed and drained
  • 1-2 cloves garlic , minced
  • 1/4 teaspoon oregano dried
  • 1/2 teaspoon thyme dried
  • 1 Tablespoon dried parsley flakes
  • salt to taste, freshly ground
  • black pepper to taste, freshly ground
  • 1 1/2 cups ham 225g, leftover, diced

Instructions

Slow Cooker (see notes for stovetop option):

  1. Place the ham bone, water, peppercorns, bay leaves and garlic in slow cooker. Cook on LOW for 6-7 hours (or overnight) or HIGH for 3.5 hours.
  2. Cook bacon in a large skillet over medium heat. Remove to plate. Remove some of the grease from the pan, then add chopped onion, celery, zucchini, carrots, and potato and sauté for a few minutes.
  3. Remove ham bone and remove any meat from it. Add ham, sautéed veggies, bacon, and remaining ingredients to broth in the slow cooker. Taste and add seasonings, as needed. Cook on LOW for 2 more hours, or until potatoes are tender.
