Ham Bone Soup (Slow Cooker)
Description
This slow cooker Ham Bone Soup centers around a smoked ham bone that imparts rich, savory flavors to the broth over several hours. Butter-sautéed onions begin the flavor base, complemented by diced potatoes, carrots, celery, corn kernels, and white cannellini beans that add body and texture. The addition of bay leaves and thyme provides herbal depth.
Cooking low and slow allows the ham bone's meat to become tender and the flavors to meld together, producing a hearty soup with a well-rounded smoky and vegetable-rich character. Once cooked, the ham meat is removed from the bone, chopped, and stirred back into the soup for a satisfying bite.
This soup serves well as a warming meal, making use of leftover ham bones and vegetables. It can be enjoyed alongside bread or as a standalone dish. The recipe notes suggest adding leftover gravy or homemade stock for enhanced flavor and accommodating substitutions like soaked beans or additional vegetables.
Leftovers store well refrigerated for several days and reheat easily on the stovetop or microwave.
Ingredients
- 1 tablespoon butter
- 1 large onion diced
- 1 ham bone meaty
- 1 pound potato diced, peeling optional, Yukon gold variety
- 3 medium carrot sliced
- 2 ribs celery sliced
- 1 cup corn kernels thawed, frozen
- 15 ounces cannellini beans drained and rinsed, canned
- 7 cups chicken broth or water
- 2 bay leaf
- 2 prigs thyme or 1 teaspoon dried thyme leaves, fresh
- ¼ cup parsley chopped, fresh
Instructions
- Cook the onion in butter in a small skillet over medium heat until slightly softened.
- Combine all ingredients in the slow cooker.
- Cover and cook on high for 6 hours or on low for 9-10 hours.
- Remove ham bone, bay leaves and thyme stems (if using fresh thyme).
- Chop meat from the bone and add back into the soup. Stir and serve.
Notes
- Ham bone size and amount of meat affect the soup’s flavor intensity; use a smoked ham hock if a ham bone is unavailable.
- Incorporate leftover gravy or homemade stock to deepen the soup's flavor profile.
- Canned beans can be substituted with soaked dry beans, though this will lengthen cooking time.
- Add leftover roast vegetables during the last 30 minutes for variety and to use up meal remnants.
- Only use the ham bone once; discard afterward.
- Store leftovers covered in the refrigerator for 4-5 days, reheating gently before serving.
