Description
This slow cooker Ham Bone Soup is built on a base of beans soaked and rinsed, combined with a ham bone, diced ham, onions, carrots, chicken broth, and seasonings like thyme and garlic. Cooking on high or low for several hours allows the beans to become tender and the broth to gain the smoky, meaty flavor from the ham bone. Once beans are tender, diced ham, tomatoes, and seasoning packet from the bean mix are added before a final brief simmer to meld flavors.
The soup presents a mix of soft beans and chunks of ham in a savory broth with a herbal undertone from thyme. Chopped parsley at the end adds fresh aroma and some color contrast. It’s suitable for a filling lunch or dinner and is traditional comfort food for many.
Because ham can be salty, low sodium broth is recommended to avoid overly salty soup. The recipe does not require soaking the beans, just rinsing. Various dried bean soup mixes are adaptable to this recipe. If no seasoning packet is included with the beans, omitting that step still yields a satisfying soup.
Ingredients
- 1 yellow onion peeled and chopped
- 3 carrot peeled, quartered and sliced
- 1 ham bone
- 1 ounce bag dried bean soup mix
- 8 cups chicken broth low sodium
- 1 teaspoon thyme dried
- 2 teaspoons garlic minced
- 3 cups ham diced
- 1 ounce can diced tomatoes undrained
- 1/4 cup parsley chopped
- salt to taste
- black pepper to taste
Instructions
- Rinse the beans thoroughly; set aside the seasoning packet for later use.
- Place the onion, carrot, ham bone, beans, chicken broth, thyme and garlic in a slow cooker.
- Cook on HIGH for 4 hours or LOW for 8 hours, or until beans are done.
- Remove the ham bone from the slow cooker. Stir in the diced ham, tomatoes, seasoning packet and salt and pepper to taste.
- Cover and cook for an additional 20 minutes.
- Sprinkle with parsley and serve.
Notes
- Use low sodium chicken broth to control the saltiness from the ham.
- Rinse dried beans thoroughly before cooking; soaking is not necessary for this recipe.
- Any mixed dried bean soup mix works; if your beans lack a seasoning packet, you can leave it out without impacting flavor excessively.
