  • 1 yellow onion peeled and chopped
  • 3 carrot peeled, quartered and sliced
  • 1 ham bone
  • 1 ounce bag dried bean soup mix
  • 8 cups chicken broth low sodium
  • 1 teaspoon thyme dried
  • 2 teaspoons garlic minced
  • 3 cups ham diced
  • 1 ounce can diced tomatoes undrained
  • 1/4 cup parsley chopped
  • salt to taste
  • black pepper to taste

Instructions

  1. Rinse the beans thoroughly; set aside the seasoning packet for later use.
  2. Place the onion, carrot, ham bone, beans, chicken broth, thyme and garlic in a slow cooker.
  3. Cook on HIGH for 4 hours or LOW for 8 hours, or until beans are done.
  4. Remove the ham bone from the slow cooker. Stir in the diced ham, tomatoes, seasoning packet and salt and pepper to taste.
  5. Cover and cook for an additional 20 minutes.
  6. Sprinkle with parsley and serve.

Notes

  • Use low sodium chicken broth to control the saltiness from the ham.
  • Rinse dried beans thoroughly before cooking; soaking is not necessary for this recipe.
  • Any mixed dried bean soup mix works; if your beans lack a seasoning packet, you can leave it out without impacting flavor excessively.
