Description
This recipe starts with cold, leftover cooked rice to prevent clumping and achieve a better fried texture. Eggs are scrambled separately in sesame or peanut oil, then vegetables and ham are sautéed briefly before the rice is added. Tossing the rice frequently encourages even toasting and slight browning. Chicken broth and soy sauce bring moisture and savory depth, while green onions add a fresh note.
The ham contributes saltiness and texture, complemented by peas and carrots for color and mild sweetness. The method ensures the rice remains separate and not mushy, with a balance of flavors from soy, broth, and sesame oil.
Variations include substituting tofu and additional vegetables for a vegetarian option, using brown rice instead of white, and freezing for up to three months. Leftovers can be reheated easily, making this a flexible dish for meals and using cooked rice.
Ingredients
- 3 cups rice cooked, cold, leftover
- 2 large egg
- 4 Tablespoons sesame oil (or peanut oil)
- 1/2 cup peas frozen
- 1/2 cup carrot , peeled and diced
- 3/4 cup ham chopped
- 2 Tablespoons chicken broth low-sodium
- 2 Tablespoons soy sauce or more, to taste, low-sodium
- 3 green onions chopped
Instructions
- Leftover cooked and cooled rice works best, and could be made earlier in the day and refrigerated until cold. Use wet fingers to separate the rice grains.
- Heat 1 Tablespoon of oil in a wok or frying pan. Beat the eggs in a small bowl and add to the pan when the oil is hot.
- Stir gently with a wooden spoon just until cooked. Transfer to a bowl and set aside.
- Add another tablespoon of oil to the pan. Add peas, carrots and ham and saute for several minutes. Remove to the bowl with the eggs.
- Add another tablespoon of oil to the pan over medium high heat. When the oil is hot, add the rice and toss every 30 seconds until it's lightly browned, about 5 minutes.
- Add the chicken stock, soy sauce and green onion and toss to combine. Return eggs and veggies to the pan.
- Add more soy sauce, to taste, if desired. Serve immediately.
Notes
- Use cold leftover rice for best texture and ease of stir-frying.
- Make it vegetarian by substituting ham with sautéed tofu or extra vegetables.
- Brown rice can be swapped in at a 1:1 ratio.
- Freeze cooked ham fried rice in airtight bags for up to 3 months; thaw overnight before reheating.
