Ham Glaze Recipe

This Ham Glaze recipe combines butter, brown sugar, pineapple juice, and warm spices to create a sweet and aromatic coating for baked ham. The glaze simmers until syrupy and is applied in two stages during baking to build layers of caramelized flavor and a glossy surface. The spices add depth alongside the tropical sweetness from pineapple juice.

Description

This Ham Glaze recipe brings together butter, brown sugar, pineapple juice, cinnamon, nutmeg, and cloves cooked over medium heat until the mixture becomes syrupy. This glaze is poured over the ham partway through baking, covered and roasted at 350°F, then uncovered and glazed again before a final bake at a higher temperature. This process creates a moist, caramelized crust with warm spice notes and sweet pineapple undertones enhancing the ham's flavor.

Using either light or dark brown sugar affects the flavor profile slightly, with dark brown sugar lending more molasses richness, while light sugar offers a more neutral sweetness. The glaze is best prepared just before use as it can harden if refrigerated.

If the glaze thickens too much after cooling, gently reheating it in a microwave restores pourable consistency without affecting texture or flavor. This glaze suits a variety of ham styles, providing a sweet-spiced finish that complements the savory meat.

Ingredients

Servings
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/2 cup pineapple juice
  • 1/2 teaspoon cinnamon
  • nutmeg pinch
  • cloves pinch

Instructions

  1. Add the butter, brown sugar, pineapple juice, cinnamon, nutmeg and cloves to a pan. Place the pan over medium heat.
  2. Bring the pot to a simmer and cook for 5-7 minutes or until glaze is syrupy.
  3. Pour half the glaze over your ham. Cover the ham with foil and bake at 350 degrees F for 15 minutes per pound.
  4. Uncover the ham and pour the remaining glaze over the top. Increase the oven to 400 degrees F. Bake for 15-20 minutes or until ham is caramelized and browned.

Notes

  • Light brown sugar yields a milder sweetness, while dark brown sugar adds a stronger molasses flavor to the glaze.
  • Prepare the glaze fresh before use as it does not store well and hardens when chilled.
  • If glaze thickens after cooling, gently warm it in the microwave for about 30 seconds to restore pourability.
