Ham Green Beans and Potatoes Stew
Description
This stew begins by simmering green beans, onions, and salt pork submerged in water for at least four hours, allowing the salt pork to impart a rich, smoky saltiness and the beans to tenderize thoroughly. Afterward, diced russet potatoes and cubed ham are added and cooked for an additional hour until the potatoes become soft but not falling apart, melding their mild flavor with the meats and beans.
The extended low heat cooking results in a stew where the fat and salt from the pork enrich the broth, and the tender green beans and potatoes provide texture contrasts. Seasoning with salt and pepper is adjusted at the end to balance flavors. This dish serves well as a filling meal on its own or alongside bread.
The recipe notes the importance of using salt pork rather than spiralized ham for the slow-cooked layering of flavor. The stew can be prepared up to a day ahead to deepen flavors further. It stores well in the refrigerator for up to five days or freezes for up to three months. Reheating gently prevents overcooking ingredients.
Ingredients
- 3-5 pounds green beans trimmed
- 2 yellow onion small or 1 large peeled
- 1 pound salt pork
- 3 pounds russet potato peelings optional, large diced
- 3 pounds ham cut into 1” cubes
Instructions
- Add the beans, onion, and salt pork to an extra-large pot and fill it with water until the beans are covered by 1 inch.
- Cook over low to medium heat for 4 hours, remember the longer the better, so you can go up to 8 hours here.
- Add in the potatoes and ham after the 4-hour cooking time and continue to cook for 1 hour or until the potatoes are tender.
- Season with salt and pepper, and serve.
Notes
- This stew flavor improves with longer cooking times, up to eight hours.
- Use salt-cured pork belly (salt pork) for the characteristic saltiness and richness.
- Do not use spiralized ham, as it won't provide the same texture or flavor.
- Make up to 1 day ahead for increased flavor melding.
- Store covered in the refrigerator for up to 5 days or freeze for up to 3 months.
- Reheat gently on low heat until hot to preserve texture.
