Ham Hash: Three Ways

Ham hash is made in just 30 minutes for an easy breakfast anytime! With just a few different ingredients, you can transform this recipe three ways, into an Italian, Mexican or Greek hash.

Ingredients

Servings

Ham Hash

  • ¼ cup olive oil
  • 2 pounds russet potato small dice
  • 1 cup onion diced
  • 5 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ pound ham diced

Italian

  • ¼ cup basil pesto
  • ¼ cup tomato chopped, fresh
  • ½ cup mozzarella cheese shredded
  • 1 tablespoon basil chopped, fresh

Mexican

  • 1 jalapeño diced
  • 1 teaspoon chili powder
  • ½ cup pepper jack cheese shredded
  • 1 avocado diced
  • 1 tablespoon cilantro chopped, fresh

Greek

  • 1 cup baby bella mushroom diced
  • 1 teaspoon oregano dried
  • ¼ cup tomatoes sun dried
  • ½ cup feta cheese crumbled
  • 1 tablespoon parsley chopped, fresh

Instructions

Ham Hash

  1. Add the olive oil to a large skillet over medium high heat. Once the oil is heated, add the potatoes, onion, and garlic. 
  2. Sprinkle the salt and pepper over the hash and cook for 20 minutes, stirring every 3-4 minutes.
  3. Add the ham and cook for an additional 5 minutes.

For the Italian version:

  1. Add the pesto and tomatoes with the ham. 
  2. Cook for 5 minutes, then sprinkle with the mozzarella cheese, cover and let melt for 1-2 minutes. 
  3. Remove from the heat and top with the fresh basil.
  4. Optionally top with pesto eggs.

For the Mexican version:

  1. Add the jalapenos at the same time as the potatoes, onion and garlic. 
  2. After adding the ham and cooking for 5 minutes, sprinkle the pepper jack cheese on top, cover and let melt for 1-2 minutes. 
  3. Remove from the heat and top with the avocado and fresh cilantro.

For the Greek version:

  1. Add the mushrooms at the same time as the potatoes, onion and garlic. 
  2. Add the sun dried tomatoes with the ham. 
  3. Cook for 5 minutes, remove from the heat, sprinkle with the feta cheese and fresh parsley.

Notes
