Ham with Pineapple and Cherries
Description
Starting with a pre-smoked ham, a diamond pattern is cut across the surface, allowing a clove to be placed at each intersection. The ham is then coated with a glaze made from brown sugar, reserved pineapple syrup, and lemon-lime soda, which caramelizes during baking.
Pineapple rings are attached over the ham using toothpicks, with a cherry nestled in each ring’s center for added sweetness and visual appeal. Baking the covered ham initially helps meld the flavors, with a later uncovered phase to deepen the glaze and caramelize the fruit toppings.
The clove-studded crust adds subtle spice that balances the sweet glaze, while the pineapple and cherries contribute a fruity brightness. After resting post-baking, the ham is sliced and served, offering a combination of smoky, sweet, and spiced flavors.
The glaze is basted during cooking to maintain moisture and maximize flavor penetration. Careful monitoring prevents burning the sugar or fruit toppings, ensuring a rich finish.
Ingredients
- 1 lb smoked ham bone in
- 1 ounce can pineapple drain and reserve syrup, slices in syrup
- 10 maraschino cherries
- 3 tablespoons clove whole
- 1/2 cup brown sugar packed
- 1 can lemon-lime soda
Instructions
- Preheat oven to 375 degrees. Place the ham in a large baking pan.
- In a small bowl, whisk together the brown sugar, pineapple syrup and lemon lime soda; set aside.
- Use a knife to score a diamond pattern in the top of the ham, cutting about 1/2 inch into the ham. Place a clove into each diamond.
- Pour the glaze over the ham.
- Arrange the pineapple slices on the exterior of the ham; secure the pineapple slices with toothpicks.
- Place one cherry into the center of each pineapple ring, secure the cherries with toothpicks.
- Cover with foil and bake for one hour. Uncover and bake for an additional 40 minutes, basting occasionally with the glaze from the bottom of the pan. Watch closely to make sure the pineapple and cherries don't burn.
- Remove from oven and let rest for 10 minutes before slicing. Remove toothpicks and cloves before serving.
Notes
- Score the ham deeply enough to hold cloves securely but not cut through the meat.
- Keep a close eye during the uncovered baking stage to avoid burning the pineapple and cherries.
- Basting the glaze occasionally helps maintain moisture and intensify flavor.
- Let the ham rest before slicing to allow juices to redistribute.
