Ham with Pineapple Glaze
Description
The ham is preheated and baked covered at a moderate temperature until it reaches an internal temperature of 100-110°F, then the foil is removed to allow glaze application. The pineapple glaze is prepared by boiling white wine with herbs, then adding soy sauce, pineapple juice, cloves, sugar, and butter until syrupy. The glaze is brushed repeatedly over the ham while increasing the oven temperature to achieve a glossy, flavorful finish and a final internal temperature of 140°F.
This preparation results in tender ham with a balanced sweet and savory crust from the pineapple sauce and spices. The use of fresh herbs and gradual temperature changes during roasting allow the flavors to meld, and the glazing adds a sticky, shiny coating reminiscent of classic holiday ham presentations.
A practical tip from the notes addresses potential saltiness in the serving sauce made from pan drippings, suggesting diluting with water to suit personal taste preferences. This dish suits festive meals or special occasions where a glazed ham stands as a centerpiece.
Ingredients
- 5-8 pounds ham bone-in spiral
- 6 thyme fresh, sprigs
- 2 tablespoons butter unsalted
- 1 cup brown sugar
- 3/4 cup white wine divided
- 10 clove or more to taste, whole
- 6 ounces pineapple juice
- 2 tablespoons soy sauce
- 1 bay leaf
Pineapple Serving Sauce
- 1 cup brown sugar
- 2 tablespoons all-purpose flour
- 1 oz pineapple crushed, in juice; canned
- 1/2 cup water
- 2 tablespoons butter unsalted
- 1/2 cup pan drippings
- 1 teaspoon red pepper flakes
Instructions
- Preheat the oven to 325F/165C.
- Place the ham in a roasting pan and cover with foil. Bake until 100-110F/37-43C in the center (approximately 10-14 minutes per pound). This should take about 1 hour and 20 minutes for an 8 pound ham.
- Meanwhile, make the pineapple glaze.
- In a small sauce pan add 1/2 cup of the wine, and the herbs and bring to a boil. Then, remove the herbs (but reserve them) and add the soy, pineapple juice, cloves sugar and butter. Boil until syrupy.
- After about an hour, or 3/4 of the way, remove the foil and increase the oven temperature to 350F/176C and pour the remaining 1/3 cup of wine and the herbs to the roasting pan. Let it cook the rest of the way through until it gets to 110F/43C internal temp.
- Then, flip the ham up and brush 1/3 of the glaze over the ham and increase the temperature again to 400F/205C. Cook another 30 minutes, brushing the remaining glaze every 10 minutes (until you get to 140F/60C internal temperature).
- Remove the ham from the oven and brush again with glaze. Transfer to a serving platter and let it rest 15 minutes before serving.
- In the meantime make the serving sauce by combining all the ingredients into a sauce pan and cooking until syrupy.
Bom Apetite!!
Notes
- To reduce saltiness in the serving sauce, dilute pan drippings with water or use equal parts of drippings and water.
- The ham’s internal temperature guides doneness during roasting and glazing stages.
- Fresh thyme, cloves, and bay leaf add aromatic depth when making the glaze and roasting.
