Hamburger Casserole
Description
The recipe begins by boiling rotini pasta until al dente and adding frozen mixed vegetables for the final minute of cooking. Ground beef and diced onion are browned and seasoned with oregano, basil, garlic powder, salt, and pepper. Tomato-based ingredients including pasta sauce, diced tomatoes, tomato paste, and Worcestershire sauce are added to create a rich meat sauce that simmers until slightly thickened.
The cooked pasta and vegetables are combined with the sauce, then spread into a baking dish. Shredded cheddar cheese tops the casserole before baking at 400°F for 15 to 18 minutes, melting the cheese and warming the dish through.
The casserole offers a comforting mix of protein, vegetables, pasta, and cheese. It stores well, keeping up to four days refrigerated and capable of freezing either before or after baking. Reheating can be done on the stove or microwave.
Ingredients
- 8 ounces rotini pasta or medium pasta
- 1 pound ground beef lean
- 1 small onion diced
- 1 ½ cups mixed vegetables frozen
- 14 ounces pasta sauce
- 14 ounces diced tomatoes or petite diced tomatoes, lightly drained, 1 can, canned
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- ½ teaspoon oregano dried
- ½ teaspoon basil dried
- ½ teaspoon garlic powder
- ¼ teaspoon salt or to taste
- ¼ teaspoon black pepper
- 1 ½ cups cheddar cheese shredded, blend
Instructions
- Preheat the oven to 400°F.
- Bring a large pot of salted water to a boil and cook the rotini al dente according to package directions. Add the frozen mixed vegetables to the boiling water for the last minute of cooking time.
- Heat a 10-inch skillet over medium-high heat. Add the ground beef and diced onion to the skillet, cooking until the beef no pink remains. Drain any grease. Stir in the oregano, basil, garlic powder, salt, and pepper.
- Add the pasta sauce, diced tomatoes, tomato paste, and Worcestershire sauce to the skillet. Simmer for 4 to 5 minutes or until thickened.
- In a large bowl, combine the sauce, pasta, and vegetables. Spread into a 2½ quart baking dish and top with cheese.
- Bake for 15 to 18 minutes or just until heated through and the cheese is melted.
Notes
- Store leftovers covered in the refrigerator for up to 4 days.
- Reheat the casserole on the stovetop or in the microwave until warmed through.
- You can freeze the casserole wrapped tightly in foil before or after baking; thaw overnight in the refrigerator before reheating.
