Hamburger Gravy
Description
The recipe begins by browning lean ground beef in a skillet and cooking chopped onions until soft, then adding garlic either fresh or as powder. Butter and all-purpose flour are stirred in to coat the meat mixture, serving as a thickening base. Milk is gradually added along with beef bouillon paste or cubes and herbs such as sage and thyme, seasoning to taste with salt, black pepper, and optional red pepper flakes for mild heat. The mixture is cooked while stirring until thickened into a smooth gravy.
This gravy combines the rich flavor of meat with creamy texture from the milk and butter-flour roux. The inclusion of herbs and bouillon enhances the depth of flavor. It pairs well with a broad range of starches like mashed potatoes, biscuits, rice, bread, or pasta and can accompany vegetables like green beans or roasted veggies as part of a main meal.
Substitutions include blending half ground beef with pork sausage for richer flavor, or using ground turkey or chicken. For a dairy-free version, butter is omitted and beef broth replaces milk, with extra flour added for thickening. Additional mix-ins like sautéed mushrooms or frozen peas and corn can also be stirred into the gravy. A scoop of sour cream can be added for extra creaminess. Leftover gravy stores well in the fridge and freezer, and reheating instructions include adding milk or broth to loosen it as needed.
Ingredients
- 1 pound ground beef lean
- 1/3 cup onion chopped
- 2 cloves garlic , minced, or 1/2 teaspoon garlic powder
- 1 tablespoon butter
- 3 Tablespoons all-purpose flour
- 2 teaspoons beef bouillon paste , or 2 beef bullion cubes
- 2 ½ cups milk
- 1/8 teaspoon sage ground
- 1/8 teaspoon thyme dried
- salt to taste
- black pepper to taste
- red pepper flakes to taste, optional, crushed
Serving ideas:
- mashed potato for breakfast or toast
- pasta
- rice
- Biscuit
- bread
- potato
- Green bean or roasted vegetables
Instructions
- Cook meat: Add ground beef to a deep skillet over medium-high heat. Cook, crumbling into small pieces, until browned. Remove most (but not all) of the grease. Add onions to the pan and cook for 2-3 minutes.
- Gravy: Add flour and butter and stir to coat the meat. Add milk and seasonings. Cook, stirring frequently, until gravy is thickened, 5-10 minutes. Taste and add additional seasonings, as needed.
- Serve warm over mashed potatoes, biscuits, bread, noodles, rice, or breakfast potatoes.
Notes
- Combine ground beef with pork sausage or add chopped bacon for deeper flavor variations.
- Use cornstarch instead of flour as an alternative thickener if desired.
- For dairy-free version, omit butter and substitute beef broth for milk; add extra flour to thicken.
- Stir in sautéed mushrooms, frozen peas, or corn for added texture and flavor.
- Adding a scoop of sour cream at the end creates a creamier gravy.
- Store leftovers in airtight container in fridge up to 5 days; reheat with added milk or broth to adjust consistency.
- Freeze cooled gravy up to 3 months; thaw overnight and reheat in skillet, adding butter, flour, and half and half to refresh thickness.
