Hamburger Steak (with Onion Gravy!)

Hamburger Steak combines ground beef blended with finely minced onions, frozen butter shards, garlic, mustard, and Worcestershire sauce, shaped into tender oval patties. They're pan-seared then topped with a richly flavored onion gravy made from caramelized onions and a seasoned broth thickened with cornstarch. This hearty dish offers a savory balance and comforting texture, suitable as a main course often enjoyed with mashed potatoes or vegetables.

Description

The hamburger steaks are made by gently mixing ground beef with minced yellow onion, shredded frozen butter, minced garlic, yellow mustard, and Worcestershire sauce. The addition of frozen butter within the meat mixture helps retain moisture, yielding juicy and tender patties. The mixture is formed into oval shapes and refrigerated briefly before seasoning with salt and pepper and pan-searing to develop a crust.

The accompanying onion gravy is built by slowly caramelizing sliced onions in butter to develop sweetness and depth. Chicken and beef broth, along with onion and garlic powders and Worcestershire sauce, are added to enrich flavor. A cornstarch slurry thickens the gravy to a smooth consistency. This gravy is simmered with the steaks' pan drippings to enhance taste and served hot over the steaks.

The dish pairs well with creamy mashed potatoes, roasted vegetables, or steamed greens. Optional additions mentioned include cooked and crumbled bacon mixed into the meat or mushrooms added to the gravy for extra flavor and texture. Swiss cheese can be melted on top for a cheesy variation.

This recipe balances robust savory elements and a moist texture in the beef, alongside the velvety, flavorful onion gravy that brings a classic comfort element to the meal.

  • 1 ½ lbs. ground beef 85% lean
  • 4 Tablespoons butter shredded, frozen
  • ½ cup yellow onion very finely minced
  • 2 teaspoons yellow mustard
  • 3 teaspoons Worcestershire sauce
  • 3 cloves garlic minced
  • salt
  • black pepper

Gravy

  • 2 onion sliced into ¾ inch strings, yellow
  • 3 Tablespoons butter divided, cold unsalted
  • 1 cup chicken broth
  • 1 cup beef broth
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 ½ teaspoons Worcestershire sauce
  • 1/4 cup water cold water plus 3 tablespoons corn starch
  • 1/4 cup corn starch cold water plus 3 tablespoons corn starch

Instructions

Prepare the Steaks

  1. Gently combine the minced onions, shredded frozen butter, garlic, Worcestershire sauce, mustard, and the meat. Don’t overwork the meat or it will make the steaks tough.
  2. Form into evenly sides oval steaks. Refrigerate for 15 minutes. Meanwhile, measure out remaining ingredients.
  3. Remove meat from fridge and season each side with salt and pepper.
  4. Heat olive oil in a large skillet over medium-high heat. Add the steaks and sear on each side for 2-3 minutes, handling gently. Set aside.

Make the Gravy

  1. Decrease heat to medium-low. Melt 2 Tablespoons butter in the pan and add the onions. Cook for 15-20 minutes, until the onions soften and begin to caramelize.
  2. Add the chicken broth, beef broth, onion powder, garlic powder, and Worcestershire sauce. Run a silicone spatula along the bottom of the skillet to lift up any remnants of meat, this will give the gravy extra flavor.
  3. Mix the cornstarch and cold water until fully smooth and combined.
  4. Bring the gravy to a boil and whisk in the cornstarch mixture. Once thickened, decrease heat to medium-low.

Finish the Dish

  1. Add the steaks back to the skillet and spoon the gravy on top. Cover for 10 minutes, or until cooked through. The internal temperature should be 160° F.
  2. Swirl in remaining 1 tbsp. cold butter at the end. This is a chef-inspired finishing technique that adds a smooth, velvety finish to the gravy.
  3. Sprinkle with parsley. Serve with mashed potatoes and roasted carrots!

Notes

  • Incorporate cooked and crumbled bacon into the meat mixture to add smokiness.
  • Add mushrooms to the onion gravy for an earthy flavor variation.
  • Top the cooked steaks with Swiss cheese; allow it to melt before serving.
  • For a creamier or increased quantity of gravy, stir in cream of mushroom soup and optionally a dollop of room temperature sour cream just before serving.
