Hamburger Steaks with Onion Gravy
Description
This recipe involves mixing ground beef with egg, breadcrumbs, minced garlic, seasonings, and Worcestershire sauce to form patties coated lightly with flour. The patties are browned in vegetable oil, developing a flavorful crust, but not fully cooked before resting.
Onions are then sautéed in the same pan before flour is added to create a roux, followed by beef broth to form a smooth, thick gravy. The patties return to the pan to simmer in the onion gravy, absorbing moisture and flavor while finishing cooking.
The result combines seasoned, juicy hamburger patties with a velvety onion gravy that complements the meat’s texture. This meal works well with sides like mashed potatoes or steamed vegetables for a filling comfort plate.
For juicier patties, avoid overmixing the meat. Adding butter to the gravy at the end can enrich its flavor. Leftovers store well refrigerated for several days. Ground beef can be substituted with other meats, adjusting seasoning as needed.
Ingredients
- 1 pound ground beef aka hamburger meat
- 1 egg beaten
- 1/4 cup breadcrumbs
- 1-2 clove garlic minced
- salt seasoned mix
- black pepper seasoned mix
- 1 teaspoon onion powder
- 1 teaspoon Worcestershire sauce
- 1 tablespoon all-purpose flour
- vegetable oil
Gravy
- 1 medium onion sliced thinly
- 2 tablespoons all-purpose flour
- 2 cup beef stock or broth
- salt
- black pepper
Instructions
Get prepped
- Mince the garlic, slice the onion, and measure out all ingredients.
Make the patties
- In a large bowl, mix the ground beef, egg, breadcrumbs, garlic, seasoned salt, pepper, onion powder, and worcestershire sauce. If the mixture feels too wet, add a little more breadcrumbs.
- Form into 6 patties and flatten to your desired thickness. Thinner patties cook faster. Lightly coat each one with flour.
Cook the patties
- Heat a little vegetable oil in a large skillet over medium heat. Add the patties and cook until browned on both sides. They don’t need to be fully cooked yet. Remove them from the skillet and set aside.
Make the gravy
- Add the sliced onions to the same skillet and cook until soft and translucent.
- Sprinkle in the flour and stir well, then slowly pour in the beef broth, scraping up any browned bits from the bottom of the pan. Stir and let simmer until the gravy thickens. Taste and adjust seasoning with salt and pepper.
Simmer the patties
- Return the patties to the skillet, spooning some of the gravy over the top. Let them simmer in the gravy for about 5-10 minutes, or until cooked through.
Notes
- Handle the ground beef gently when mixing to keep patties tender.
- Adding a pat of butter to the gravy before serving intensifies its richness.
- Allow patties to rest in the gravy briefly to soak up more flavor before plating.
- Store leftovers covered in the refrigerator for up to four days.
- Ground chicken, turkey, or pork can be used instead of ground beef; season these types more thoroughly.
