Harina de Maíz [Recipe + Video] Dominican Cornmeal Porridge

Harina de Maíz is a creamy Dominican cornmeal porridge cooked with milk, cinnamon, cloves, and nutmeg. This warm, mildly spiced porridge has a smooth texture from slowly cooking cornmeal in milk and optional coconut milk. It's lightly sweetened with brown sugar and flavored with whole spices, making it a comforting breakfast or snack.

Description

This Dominican cornmeal porridge blends cornmeal (harina de maíz) with whole milk and optional coconut milk to create a rich liquid base. Brown sugar sweetens the mixture gently, while cinnamon sticks and cloves add warm spice notes saved from harshness by cooking slowly over medium heat.

The mixture is first combined and rested to hydrate the cornmeal, then cooked while stirring constantly to avoid lumps until it reaches a thick porridge consistency. Once boiling breaks, heat is reduced to finish cooking and melding flavors without scorching.

The porridge is served hot or at room temperature, dusted with freshly grated nutmeg which adds a fragrant finish that complements the sweet and spiced base. This dish provides a hearty, satisfying texture and balanced flavor typical of Caribbean comfort breakfasts.

If not using coconut milk, substitute an equal amount of whole or skim milk. Stirring continuously during cooking is important to prevent sticking or lumping of the cornmeal.
