Wings are massaged in this mixture and chilled for 2 to 24 hours to maximize flavor infusion.

Roasting on a parchment-lined baking sheet spaced half an inch apart allows hot air circulation, preventing steaming and ensuring a crispy finish. Baking at 400°F for 25-30 minutes cooks the wings thoroughly to the safe internal temperature of 165°F. The result is wings with a vibrant balance of spicy, smoky, and lightly sweet notes, accented by citrus brightness.

  • 2 tbsp red pepper paste
  • 1 tbsp olive oil
  • ¼ tsp cayenne pepper
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ½ tsp dried mint
  • ½ tsp oregano dried
  • ¼ tsp smoked paprika
  • tsp fennel powder
  • salt depending on how salty the pepper paste is, generous pinch
  • black pepper to taste
  • 1 tbsp pure maple syrup
  • 2 tbsp lemon juice

Instructions

PREP WINGS:

  1. Wash the wings well with cold water. Dry each wing with a paper towel. This will ensure each wing will get nice and crispy.

MAKE HARISSA PASTE:

  1. Add the hot pepper paste, olive oil, garlic powder, cumin, mint, oregano, paprika, fennel powder, maple syrup, lemon juice, salt, and pepper in a large mixing bowl.
  2. Mix well until a thick paste/sauce forms. Season with salt to taste. It should be pungent.

COAT WINGS:

  1. Add the wings to the paste.
  2. Massage for 2-3 minutes.

CHILL WINGS:

  1. Cover the bowl with a lid or plastic wrap.
  2. Chill in the fridge for two hours or up to 24 hours.

BAKE WINGS:

  1. Move the oven rack to the middle position.
  2. Preheat oven to 400℉.
  3. Transfer the wings to a nonstick baking sheet or line a sheet pan with parchment paper when ready.
  4. Place each wing about ½ inch apart. If you place them too close, they will steam and not be crispy.
  5. Bake for 25-30 minutes or until the internal temperature reaches 165℉.
  6. Enjoy with your favorite dipping sauce.
