The Harissa Sauce starts by combining dried New Mexico chiles with garlic cloves and roasted red peppers in a food processor. Warm spices like caraway seeds, coriander, and cumin contribute distinctive earthy and aromatic notes to the blend. Olive oil is incorporated in stages while pulsing, smoothing the mixture into a thick paste that can be adjusted for consistency by adding more oil if needed. The sauce can be used immediately or stored in the refrigerator. Its robust flavor comes from the balance of dried chili heat and the sweet, smoky roasted peppers, complemented by the complex spices. Harissa sauce adds depth to meals and can be spread, mixed into stews, or used as a marinade.
Ingredients
- 15 chile pepper stems removed, dried, New Mexico
- 3 garlic cloves
- 3/4 cup roasted red pepper
- 1 teaspoon caraway seeds
- 3-6 tablespoons extra virgin olive oil , divided
- 1 teaspoon Coriander
- 1/2 teaspoon cumin
Instructions
- Combine the 15 dried New Mexico chile peppers, 3 garlic cloves, 3/4 cup roasted red pepper, 1 teaspoon caraway seeds, 3 tablespoons of the olive oil, 1 teaspoon coriander and 1/2 teaspoon cumin to the food processor. Pulse until a paste forms. If the mixture is still too thick, add more olive oil, one tablespoons at a time, until the desired consistency.
