Hash Brown Egg Casserole

This Hash Brown Egg Casserole is a baked dish combining diced ham, bell peppers, onions, hash browns, eggs, cream, milk, and cheddar cheese. The casserole bakes to a golden brown, hearty blend that features tender potatoes with a rich and cheesy egg custard, accented by savory ham and sautéed vegetables. It serves as a filling breakfast or brunch option.

Description

This casserole begins with sautéing diced onions and red and green bell peppers in olive oil until softened and seasoned with salt and pepper. These are combined with diced ham and hash browns, which can be fresh or frozen, in a prepared baking dish. Beaten eggs mixed with heavy cream, milk, salt, pepper, and shredded cheddar cheese are poured over the mixture, binding the components together.

Baked at 375°F for 45 minutes, the casserole sets to a golden brown finish, with a creamy egg custard supporting the softened hash browns and savory ham. The diced vegetables add bright flavor and a mild crunch.

The casserole is finished with sliced chives on top and cut into squares for serving. This dish works well for feeding larger groups and can be prepared flexibly with fresh or frozen potatoes. The notes highlight the technique of whisking eggs fully before gradually adding milk and cream to encourage a smooth mixture.

Ingredients

Servings
  • 1 tablespoon olive oil
  • 12 ounces ham diced
  • 1 red bell pepper seeded and finely diced
  • 1 green bell pepper seeded and finely diced
  • 1/2 cup yellow onion diced
  • salt to taste
  • black pepper to taste
  • 20 ounces hash brown fresh or frozen
  • 12 egg
  • 1/2 cup heavy cream
  • 1 cup milk
  • 2 cups cheddar cheese shredded
  • 2 tablespoons chives sliced
  • cooking spray

Instructions

  1. Preheat the oven to 375 degrees F. Coat a 9"x13" baking dish with cooking spray.
  2. Heat the olive oil in a large pan over medium high heat. Add the onions and peppers, and season with salt and pepper to taste. Cook, stirring occasionally until vegetables are softened, 3-5 minutes.
  3. Place the cooked vegetables, ham and hash browns in the baking dish, stir to combine.
  4. In a medium bowl, whisk the eggs until thoroughly blended. Add the cream, milk and salt and pepper to taste. Whisk until smooth. Stir in the cheese.
  5. Pour the egg mixture over the ham and vegetables in the pan.
  6. Bake for 45 minutes or until golden brown and cooked through. Sprinkle with chives. Cut into squares and serve.

Notes

  • Beat eggs thoroughly before slowly adding milk and cream to create a smooth custard base.
  • Either fresh or frozen hash browns can be used; frozen hash browns do not need thawing but should be broken up before adding.
