Hashbrown Casserole
Description
This Hashbrown Casserole mixes a can of cream of chicken soup, sour cream, shredded cheddar cheese, and refrigerated shredded potatoes. The ingredients are stirred together until evenly combined and spread into a baking dish prepared with cooking spray. Optionally, a topping of crushed corn flakes blended with melted butter can be sprinkled over for added texture and flavor.
Baking in a preheated 350°F oven for about an hour produces a casserole with tender potatoes and a melted cheese base. The optional corn flake topping bakes to a lightly crisp golden crust that contrasts with the creamy interior.
Variations include adding chopped onions or diced ham or bacon for extra flavor and texture. Using freshly shredded cheese is recommended but pre-shredded is acceptable. Substituting crushed crackers for the topping can offer different texture. The casserole is easy to prepare using refrigerated hashbrowns and can be adjusted with light sour cream if desired.
