Hashbrown Casserole Recipe (Funeral Potatoes)

This Hashbrown Casserole blends crispy browned potatoes with savory bacon, onions, and garlic, all combined in a creamy mixture with sour cream, half and half, and sharp cheddar cheese. Baking develops a golden cheesy crust on top, while the interior remains rich and comforting. The bacon fat used for browning enhances the depth of flavor, making it a satisfying side or main dish during colder months or family gatherings.

Description

The Hashbrown Casserole Recipe, also known as Funeral Potatoes, features hash brown potatoes browned in bacon fat with sautéed onions and garlic. The mixture is then combined with chopped scallions, sour cream, half and half, seasoning, and shredded cheddar cheese before being baked into a creamy and cheesy casserole. The baking step creates a browned cheese topping while maintaining a tender, rich interior. The inclusion of bacon strips adds a smoky element, and the use of bacon grease for browning the potatoes adds extra flavor nuances. Frozen hash browns may require longer cooking in the skillet, but the result is a hearty casserole with a balance of crispy edges and creamy body. The casserole is baked uncovered first, then topped with more cheddar to melt as a finishing touch.

Ingredients

Servings
  • 6 Bacon cut into strips, center-cut, slices
  • 3 tablespoons onion , chopped
  • 2 cloves garlic , minced
  • 26 ounces hash brown potatoes
  • 2 tablespoons scallions , chopped
  • 1 cup sour cream
  • 1 cup half and half
  • 1/2 teaspoon salt fine sea salt
  • 1/2 teaspoon black pepper ground
  • 2 cups cheddar cheese , shredded and divided
  • cooking spray

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large skillet heat bacon strips over medium-high heat. Saute until nearly done, then add onion and garlic. Cook for an additional 4 minutes. Using a slotted spoon remove bacon bits while reserving bacon fat.
  3. Add hash brown potatoes directly to hot bacon fat. Allow hash browns to brown on side before flipping, ultimately evenly browning all potatoes. If the skillet gets overly dry add 1 tablespoon vegetable oil. Do not add too much or else the potatoes could get mushy. Frozen will take longer than fresh.
  4. In a large mixing bowl combine scallions, sour cream, half and half, fine sea salt, ground black pepper and 1 1/2 cups cheddar cheese. Add browned hash brown potatoes and bacon to the mixture and mix.
  5. Coat a casserole dish with cooking spray and transfer the hash brown mixture over.
  6. Bake uncovered for 40 minutes. Top with additional 1/2 cup cheddar cheese and return to oven until cheese has melted, approximately 5 minutes.
  7. Allow to sit for 10 minutes before serving.
