Description
This recipe starts by cutting 6 angled slits into each chicken breast, carefully not cutting all the way through to maintain structure. The chicken is seasoned with salt and your choice of seasoning, such as Italian or Creole. Alternate slices of cheese, bacon (or Canadian bacon or smoked ham), and pickled jalapeños or substituted peppers are inserted into each slit to build layers of flavor.
The prepared chicken breasts are placed in a greased casserole dish and roasted at 400°F for about 20–25 minutes until the internal temperature reaches 165°F, ensuring safely cooked poultry. During cooking, the cheese melts and mingles with the savory bacon and spicy jalapeño, while the chicken stays moist inside thanks to the stuffing blocking heat loss.

- 4 chicken breast boneless, skinless
- seasoned salt if the seasoning you're using doesn't contain salt, sprinkle some salt over each chicken breast, or Italian seasoning or all-purpose seasoning of choice
- 12 lices cheese cut in half (e.g. Swiss cheese, Cheddar, mozzarella, Monterey Jack, provolone, pepper jack, etc, of choice

Instructions
- Preheat the oven to 400 F. Cutting at a slight angle, cut 6 slits into each chicken breast, making sure not to cut all the the way through (the breast should remain attached at the bottom by roughly a thickness of 1/4 inch). Sprinkle each chicken breast with some salt and pepper or Seasoned Salt or all-purpose seasoning of choice (Creole Seasoning makes another good choice for this flavor combo). You should have 24 pieces of cheese and 24 pieces of bacon or ham. Place a piece of cheese into each slit followed by a piece of bacon/ham (fold in half to fit if needed) and a pickled jalapeno slice.
- Transfer the chicken breasts to a lightly greased casserole dish and bake until the an instant read thermometer inserted into the thickest part of the chicken breast registers 165 F, roughly 20-25 minutes.
