  • 4 russet potato
  • 1/2 cup Italian dressing divided
  • 12 lices Bacon cooked and chopped
  • 4 oz cheddar cheese cut into 48 slices
  • 1/4 cup Parmesan Cheese grated
  • chives chopped fresh

Instructions

  1. Preheat oven to 450.
  2. Cut a thin, lengthwise slice off the bottom of the potatoes so they will not roll.
  3. Cut potato crosswise without going all the way to the bottom. Do this for all the potatoes. Microwave for 10-12 minutes.
  4. Place potatoes on a foil-lined baking sheet. Brush with ¼ cup Italian dressing and bake for 15 minutes or until tender.
  5. Preheat broiler.
  6. While broiler is heating up add cheese slices in every other potato slice and bacon in the other slices.
  7. Combine remaining Italian dressing and Parmesan and drizzle over potatoes. Top with chives and broil for a few minutes. Serve warm and ENJOY!
