Hawaiian BBQ Chicken Pizza
Description
The Hawaiian BBQ Chicken Pizza begins with grilling chicken breasts brushed with olive oil and basted with barbecue sauce near the end to impart a sticky, smoky coating. The dough is stretched to about 12 inches and lightly brushed with a garlic and olive oil mixture before resting briefly to develop texture.
The chicken is cubed and layered on the barbecue sauce-coated dough with shredded mozzarella, bacon pieces, pineapple chunks, and thin red onion slices that have been rinsed to temper their sharpness. More mozzarella tops the pizza to ensure a gooey finish. The assembled pizza is baked at a high temperature until the crust turns golden and cheeses melt.
The finished pizza is served warm garnished with chopped cilantro to add a fresh contrast. The balance of sweet pineapple, tangy barbecue chicken, savory bacon, and sharp onion makes this pizza suitable for those who enjoy a combination of sweet and savory toppings on a traditional-style pizza crust.
For a crisper crust, a pizza stone can be heated in the oven and the pizza slid onto it using parchment and a peel just before baking.
Ingredients
- 1 lb pizza dough , homemade or store bought
- 12 oz chicken breast boneless skinless
- 2 Tbsp olive oil , divided
- 3/4 cup barbecue sauce , divided
- 4 lices Bacon , cooked and chopped
- 2 cups mozzarella cheese low-moisture, shredded, 8 oz
- 1 cup pineapple chop into small pieces, chopped, fresh
- 1/3 red onion sliced thin and run under cool water to remove harsh bite, medium
- 1/4 cup cilantro , chopped or torn
- 1 cloves garlic , minced
- black pepper freshly ground
Instructions
- Preheat oven to 475 degrees F.
- Preheat a grill to medium-high heat. Brush both sides of chicken lightly with 1 Tbsp of the olive oil and season both sides with salt and pepper. Grill until cooked through, rotating once halfway through cooking, and brushing with 3 Tbsp of the barbecue sauce during last 1 - 2 minutes of grilling. Remove from grill and set aside to cool 5 minutes.
- Spread pizza dough out on a floured sheet of parchment paper over a pizza tray to a 12-inch round. In a mixing bowl whisk together remaining olive oil and garlic. Brush entire surface of dough with olive oil mixture and let rest 10 minutes.
- Cut chicken into cubes. Brush dough with remaining barbecue sauce (1/2 cup + 1 Tbsp). Top with 1/3 of the mozzarella then top with chicken, pineapple, bacon and red onion. Sprinkle with remaining mozzarella and season with freshly ground black pepper.
- Bake in preheated oven until crust is golden, about 11 - 13 minutes. Slice and serve warm topped with cilantro.
Notes
- Preheat a pizza stone in the oven and slide pizza onto it for a crisper crust if desired.
- Rinse sliced red onions under cold water to reduce their sharpness before topping the pizza.
