Hawaiian Chicken Chili Kabobs

Grilled Hawaiian chicken kabobs have the perfect balance of heat and sweet, with pineapple, red pepper, red onions and savory bacon. Yum!

Ingredients

  • ¼ cup brown sugar packed
  • ½ tablespoon chili powder mild or medium
  • ½ teaspoon kosher salt Morton brand
  • ½ teaspoon black pepper freshly ground
  • teaspoon garlic powder
  • teaspoon ground ginger
  • pounds chicken breast cut into 1½" pieces, boneless, skinless
  • 1 tablespoon olive oil divided, 1 teaspoon
  • 1 red bell pepper cut into 1½" pieces, large
  • ½ red onion cut into 1½" pieces, large
  • ¼ pineapple cut into 1½" pieces, large
  • ¼ pound Canadian bacon cut into 1½" pieces, slices

Instructions

  1. If using wooden skewers, soak them in water for at least 1 hour before grilling.
  2. In a small bowl, combine brown sugar, chili powder, salt, pepper, garlic powder, and ginger. Set aside.
  3. In a medium bowl, drizzle 1 tablespoon of the olive oil over the chicken pieces and fold to coat evenly. Sprinkle the spiced brown sugar mixture over the chicken and fold again to coat evenly. Cover and refrigerate for one hour.
  4. Add red bell pepper and onion pieces to a medium bowl and drizzle remaining 1 teaspoon olive oil over the top. Fold to coat evenly.
  5. Thread seasoned chicken, red bell pepper, onion, pineapple, and Canadian bacon onto skewers. Sprinkle with salt & pepper on all sides.
  6. Heat grill to medium to medium-high heat. Make sure grates are scrubbed clean and then oiled (see Notes). 
  7. Place kabobs on hot grill grates and cook until beautifully charred. Turn the kabobs and continue to cook until charred again. The chicken should be cooked through after 12-15 minutes, but total cook time will depend on the grill temperature and size of chicken pieces. Remove from grill and serve hot.

Notes

  • I like to use long skewers to serve as a main entree, and shorter skewers to serve as an appetizer.

  • To oil the grates:  Add some vegetable oil or olive oil to a small bowl. Then fold a heavy paper towel a few times to make a smaller square. With a tongs, grasp the folded paper towel and dip it into the oil until the paper towel is soaked. Then run the paper towel over the grates, repeating until all grill grates are thoroughly oiled.
  • To oil the grates:  Add some vegetable oil or olive oil to a small bowl. Then fold a heavy paper towel a few times to make a smaller square. With a tongs, grasp the folded paper towel and dip it into the oil until the paper towel is soaked. Then run the paper towel over the grates, repeating until all grill grates are thoroughly oiled.
