Ingredients

Servings
  • 4 cups pasta cooked
  • 1/2 cup pineapple chunks
  • 1 cup ham cubed, cooked
  • 1 carrot shredded
  • 1/2 cucumber chopped (optional)
  • salt to taste
  • black pepper to taste

For the Pineapple Dressing:

  • 1/2 cup pineapple juice
  • 1/2 cup mayonnaise light
  • 2 Tablespoons apple cider vinegar
  • 1 Tablespoon sugar to taste

Instructions

  1. Add macaroni, pineapple, ham, carrots, and cucumber to a large mixing bowl.
  2. In a small bowl or measuring cup, whisk together the pineapple juice, mayonnaise, vinegar, and sugar.
  3. Pour the dressing over the pasta and toss until evenly coated.
  4. Finish with salt and pepper, to taste.
