Description
This Mai Tai recipe combines pineapple juice, rum, fresh lime juice, orange liqueur, agave nectar, and almond extract in a pitcher, then chills the blend to develop flavors ahead of time. The almond extract contributes a distinctive flavor that is subtle and unique without tasting overtly nutty. Just before serving, lemon-lime soda is stirred in to add fizz and lighten the drink.
The cocktail is poured over crushed ice to maintain coolness and moderate dilution as it is enjoyed. It pairs well with tropical or Hawaiian-inspired dishes such as Kalua pork sandwiches and poke bowls.
Adjust sweetness by varying agave nectar and serve in glasses filled with ice for best flavor. This recipe scales easily for groups and is best chilled well before guests arrive.
Ingredients
- 1 ½ cups pineapple juice cold
- ½ cup rum
- ⅓ cup lime juice freshly squeezed
- ¼ cup orange liqueur i.e., Grand Marnier
- 1-2 TB agave nectar depending on how sweet you prefer it
- 2 tsp almond extract
- 1 cup lemon-lime soda for use right before serving
- ice for serving, crushed
Instructions
- In a pitcher, combine the pineapple juice, rum, lime juice, orange liqueur, agave nectar, and almond extract. Stir well. Cover and place in fridge to chill until ready to serve (can be done several hours ahead of time.)
- When ready to serve, fill glasses with ice. Pour lemon-lime soda into the pitcher, gently stir, and divide into glasses.
Notes
- This recipe can be doubled or tripled to serve larger groups.
- Almond extract adds a distinctive flavor without tasting like almonds; it is recommended to include it.
- Serve the Mai Tai over ice to achieve the ideal flavor balance as the ice melts.
