Hawaiian Pork Chops

Hawaiian Pork Chops are thin pork chops browned and cooked in a sweet-savory pineapple soy sauce with garlic and ginger. The dish includes canned pineapple slices cooked briefly in the sauce, which is thickened with cornstarch for a glossy finish. The savory notes of soy and ginger combine with the sweetness of pineapple and brown sugar, making this dish suitable for casual dinners served over rice and garnished with parsley.

Description

This recipe uses thin pork chops seasoned with salt and black pepper and quickly seared in vegetable oil until browned on both sides. The sauce is a mixture of low sodium soy sauce, ketchup, brown sugar, and pineapple juice from canned pineapple slices. Garlic and fresh minced ginger are sautéed to release their aromas before adding the sauce to the skillet.

After simmering briefly, a cornstarch slurry is incorporated to thicken the sauce, creating a shiny glaze that coats the pork. The reserved pineapple slices are then returned to the pan to warm and absorb some sauce flavor. This combination yields pork chops that balance savory, sweet, and tangy tastes with a moist texture.

Serving suggestions include rice or vegetables to complement the saucy pork and enhance meal balance. Garnishing with fresh parsley adds color and a fresh herbal note.

Use thin pork chops for quick, even cooking and better sauce absorption.Reserve pineapple slices and juice separately to maintain texture and maximize flavor.Thicken sauce with cornstarch slurry to achieve desired consistency without overpowering flavors.

Ingredients

Servings
  • 1 ½ pounds pork chop about 8 thin chops, thin
  • ½ cup soy sauce low sodium
  • ¼ cup ketchup
  • ¼ cup light brown sugar
  • 1 (15-ounce) pineapple slices divided, in juice, canned
  • 2 tablespoons vegetable oil divided
  • salt to taste
  • black pepper to taste, ground
  • 1 tablespoon garlic minced
  • 1 teaspoon ginger fresh, minced
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • parsley for garnish, chopped

Instructions

  1. Make the sauce in a large measuring cup by combining ½ cup low sodium soy sauce, ¼ cup ketchup, ¼ cup light brown sugar, and the juice from 1 (15-ounce) can pineapple slices in juice, reserving the pineapple slices for later. Set aside.
  2. Heat 1 tablespoon of the 2 tablespoons vegetable oil in a large skillet over medium-high heat.
  3. Season 1 ½ pounds thin pork chops on both sides with salt and ground black pepper. Add the pork to the skillet and cook for about 2 minutes on each side until each side is browned. Remove from the pan and set aside.
  4. Add the remaining tablespoon of oil to the skillet. Add 1 tablespoon minced garlic and 1 teaspoon fresh minced ginger and cook for 1 minute, stirring constantly.
  5. Pour the sauce into the skillet. Bring to a simmer and cook for 2-3 minutes.
  6. In a small bowl combine 1 teaspoon cornstarch and 1 tablespoon water, then stir the cornstarch mixture into the sauce. Add the pork back to the skillet.
  7. Add the reserved pineapple slices and simmer for 10 minutes until the sauce has thickened and the pork reaches an internal temperature of 145 degrees Fahrenheit.
  8. Serve immediately with chopped parsley for garnish, if desired.
