Hawaij (Spice Mix from Yemen)

Hawaij is a fragrant Yemeni spice blend made by roasting and grinding cumin, black peppercorns, coriander seeds, cardamom seeds or pods, and cloves, then mixed with turmeric powder. This aromatic powder enhances meat, vegetable, soup, and stew dishes with warm, earthy, and slightly pungent flavors. Its versatility includes use as a dry rub, roasted vegetable seasoning, and flavoring for butter or baked goods.

Description

The Hawaij spice mix originates from Yemen and includes toasted cumin, black peppercorns, coriander seeds, cardamom seeds or pods, cloves, and turmeric powder. Toasting the whole spices releases aromatic oils before they are finely ground and blended with turmeric, producing a warm, earthy, and complex powder. The blend stores well in an airtight container for up to six months, maintaining freshness.

This spice blend is often applied as a dry rub for various meats like steak, lamb, or ribs, adding rich aromatic notes when slow roasted or grilled. It's also used to season roasted vegetables, particularly root vegetables like sweet potatoes, pumpkin, and potatoes, enhancing natural sweetness. Hawaij transforms soups and stews by adding depth and character and is used in compound butters with garlic for spreading or cooking.

Beyond savory uses, Hawaij can be added to baked goods such as scones or biscuits for unique spiced flavor. Regularly making small batches keeps the spice mix fresh and vibrant.
