Haydari Recipe

Haydari is a Turkish yogurt sauce made using feta cheese, garlic and fresh herbs such as dill and mint. Ideal as part of a Middle Eastern meze.

Ingredients

Servings
  • 260 g Greek yogurt
  • 2 tablespoon feta cheese
  • 1 garlic crushed, fresh clove
  • 1 teaspoon mint finely chopped, fresh
  • 3 teaspoon dill finely chopped, fresh
  • 1 teaspoon olive oil
  • ¼ teaspoon salt or to taste, fine
  • lemon to taste, juice of half

Instructions

  1. Place feta cheese and crushed garlic in a bowl.
  2. Mash together with a fork to combine.
  3. Add greek yogurt, mint, dill and olive oil.
  4. Mix to combine, then add salt and lemon juice to taste.

  • I like to remove the "core" from the garlic clove to use in this recipe. This gives a smoother, less sharp garlic flavour. Click here for more information about coring your garlic cloves and when you should do it.
  • Want to make this garlic sauce with a milder garlic taste? Try substituting garlic powder or garlic infused olive oil for the plain olive oil in the recipe and leaving out the fresh garlic altogether.
  • This sauce can be made ahead and kept for 2 days in fridge in an airtight container.
