Hayley's Famous Cinnamon Rolls

Hayley's Famous Cinnamon Rolls offer a rich, yeast-raised dough made with milk, eggs, butter, sugar, and yeast, filled with a cinnamon and brown sugar mixture. The dough rises in a warm oven then rolls are sliced, baked, and topped with a creamy cream cheese frosting. Available in full or half batch, they produce soft, sweet rolls ideal for breakfast or brunch.

Description

These cinnamon rolls are crafted from a yeast dough that begins with warming milk and activating yeast with sugar. The dough includes eggs, melted butter, salt, and flour, combined and allowed to rise in a warm oven until doubled in size. After rising, the dough is rolled out, generously spread with softened butter, and topped with a mix of brown sugar and cinnamon before being rolled into a log and sliced into rolls.

The prepared rolls are arranged on a greased baking sheet to bake until the rolls are cooked through and golden. Once baked, they are finished with a frosting made from butter, cream cheese, powdered sugar, and vanilla, providing a tangy sweetness that complements the cinnamon-sugar filling. The recipe includes measurements for both full and half quantities, accommodating different serving sizes.

This recipe yields a large batch of cinnamon rolls, but the quantity can be halved for fewer servings. The method includes careful yeast proofing and proper dough handling to achieve soft, fluffy rolls with a balanced sweetness and rich cream cheese topping.

HALF RECIPE:

  • 1 cup milk microwave for 90 seconds and then test, warm
  • 1 1/4 Tablespoons yeast
  • 1/2 cup sugar (divided)
  • 2 large egg
  • 6 Tablespoons butter (melted)
  • 1 teaspoon salt
  • 4 1/4 - 4 1/2 cups flour

Brown Sugar Filling:

  • 1/4 cup butter (softened)
  • 1 1/3 cups brown sugar
  • 2-3 Tablespoons cinnamon

Cream Cheese Frosting:

  • 1/2 cup butter (softened)
  • 4 ounces cream cheese (softened)
  • 2 3/4 cups powdered sugar
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat oven to 200 degrees.
  2. Place milk in microwave-safe bowl. Microwave for about 90 seconds or until the milk is warmed.
  3. Add yeast and stir.
  4. Place 1 cup of sugar in measuring cup. Scoop out 2 Tablespoons of sugar from measuring cup and place in a bowl. Stir. Let yeast proof for 5-10 minutes.
  5. Meanwhile, add remaining sugar, eggs, melted butter, and salt in large mixing bowl. Once yeast is activated, add mixture to a bowl. Stir in flour, 3 cups at a time. Watch for the dough to start coming off the sides of the bowl.
  6. Once the oven is preheated to 200 degrees, turn OFF oven.
  7. Place dough in an oven-safe bowl. Cover bowl with a moist towel. Put in oven to rise for 1 hour to double in size.
  8. Once the dough has doubled in size, roll out on a floured surface into a large rectangle.
  9. Spread softened butter all over the dough. Place brown sugar and cinnamon in a bowl. Sprinkle over dough.
  10. Tightly roll up dough and slice into rolls.
  11. Place on greased baking sheets and cover loosely with towel or saran wrap.
  12. Let rise for at least 1 hour.
  13. Bake at 400 degrees for 9-12 minutes.
  14. To make frosting: Cream together butter and cream cheese for 2 minutes. Stir in powdered sugar and vanilla.
  15. Spread over slightly cooled cinnamon rolls.
  16. Serve warm.

Notes

  • This recipe makes a large batch; you can halve all ingredients if you want fewer cinnamon rolls.
  • Use warm milk to properly activate yeast for good dough rise.
  • Let the dough rise covered in a warm, turned-off oven to help it double in size efficiently.
  • Spread the filling evenly and roll tightly for uniform cinnamon rolls.
