Healthier Tater Tot Casserole

This Healthier Tater Tot Casserole is comfort food to it's core! Made with lean ground beef, a creamy and cheesy filling and topped with crispy tater tots, it's an easy casserole dish that's ready in less than an hour and the whole family will love!

Ingredients

  • 1 tsp olive oil
  • 3 garlic minced - I used frozen cubes, cloves
  • 8- oz. mushroom sliced
  • 1 white onion diced, medium, 200g
  • 2 lb. ground beef I used 96/4, lean
  • 3/4 cup ketchup I used no sugar added, 180g
  • 2 Tbsp yellow mustard 30g
  • 1 Tbsp Worcestershire sauce
  • 1.5 cup sharp cheddar cheese divided, 2%, shredded, 168g
  • 28- oz. tater tots frozen
  • ketchup for serving, sliced green onions
  • hot sauce
  • sour cream
  • green onion

Instructions

  1. Preheat the oven to 400 degrees F. Add olive oil and garlic to a large skillet and set to medium heat.
  2. Once shiny, add onions and mushrooms and cook for 4-5 minutes or until they start to soften. Then transfer to a 9x13-inch casserole dish.
  3. Add the ground beef to the skillet and cook, breaking into crumbles as you go until no longer pink; about 6-7 minutes.
  4. Transfer beef mixture to the casserole dish along with 1/2 cup shredded cheese and toss evenly with the onions and mushrooms; Stir in the ketchup, mustard and worcestershire sauce and season with salt and pepper to taste (I added 1/2 tsp salt); smooth out into an even layer.
  5. Top with the remaining shredded cheese, and then the tater tots.
  6. Bake for 25-30 minutes, or until the cheese is melted and the tater tots are golden brown on top.
  7. Serve hot with ketchup or hot sauce, sour cream and green onions if desired, and enjoy!

Notes

  • Not necessary but just an FYI, if you let this casserole sit for 20-30 minutes, the tater tots will come together and it's easier to serve this tater tot casserole as a “piece” of casserole. Either way it's yummy!
