  • 1/2 cup maple syrup use Lakanto Maple Syrup for low carb alternative
  • 1/2 tsp almond extract
  • 1 1/2 cups almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup almond sliced, plus additional for topping

Instructions

  1. Preheat oven to 350F and line or grease 8 cups of a muffin tin
  2. In a large mixing bowl whisk together 4 eggs, melted coconut oil, maple syrup, and almond extract
  3. In a separet bowl combine almond flour, baking soda, baking powder, salt, and sliced almonds
  4. Fold dry ingredients into wet with a spatula
  5. Scoop about a 1/4 cup of batter into each of 8 muffin cups
  6. Place in the oven and bake at 350F for 28 minutes
  7. Remove from the oven and allow to cool fully and then enjoy!

Notes

  • Using a low-carb or sugar-free maple syrup alternative reduces net carbs to about 3 grams per muffin.
