Healthy Apple Muffin Recipe

Healthy Apple Muffins blend grated Granny Smith apple with oats, bran cereal, and a balance of wet ingredients like yogurt, honey, and oil. The batter produces moist, dense muffins topped with oats and brown sugar for texture. These muffins offer natural sweetness and cinnamon-spiced warmth for breakfasts or snacks.

Description

This muffin recipe combines eggs, vegetable oil, milk, honey, yogurt, and vanilla to create a moist base that soaks rolled oats and crushed bran cereal. Flour, baking powder, baking soda, cinnamon, and salt are then mixed in along with grated Granny Smith apple, which adds moisture and a mildly tart flavor. The batter is thick and fills muffin cups nearly full, baking for about 15-20 minutes until a toothpick comes out clean.

The finished muffins have a slightly dense crumb with moist interior from the apples and yogurt. The oat and brown sugar topping adds mild sweetness and a slight crunch. Cinnamon adds aromatic warmth to the flavor profile. The recipe yields 16 muffins and can be enjoyed warm with butter or jam.

These muffins refrigerate well and can be quickly warmed in the microwave, making them convenient for quick mornings or snacks. They balance fruit, grains, and spices without excessive sweetness.

Ingredients

Servings
  • 2 egg
  • 2/3 cup vegetable oil
  • 1/2 cup milk whole
  • 2/3 cup honey
  • 1/4 cup PLAIN yogurt or vanilla yogurt
  • 1/2 tsp vanilla extract pure
  • 1 cup rolled oats + 3 tbsp for topping (quick or old fashioned)
  • 1 1/4 cup bran cereal crushed
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 large apple peeled and coarsely grated, Granny Smith
  • 1 tbsp brown sugar

Instructions

  1. Preheat the oven to 375F and line your muffin tin with paper liners.
  2. Mix the eggs, oil, milk, honey, yogurt, and vanilla together in a large mixing bowl until well blended. Add 1 cup of the rolled oats and the crushed bran. Let soak for 10 minutes.
  3. In another bowl, mix together flour, baking soda, baking powder, cinnamon, and salt. Add the wet ingredients in and mix until blended {the batter will be quite thick}. Stir in the grated apple.
  4. Scoop the batter into the muffin tin and fill up almost to the top {they rise very little}.
  5. Mix brown sugar and the remaining oats together and sprinkle on top.
  6. Bake for 15-20 minutes {until a toothpick inserted into the center of the muffin comes out clean}. Makes 16.
  7. Serve warm with butter or jam. We just refrigerate these and warm them up in the microwave for 10-20 seconds in the morning.
