Healthy apple oatmeal cookies (GF, vegan)

These Healthy Apple Oatmeal Cookies are gluten-free and vegan, combining grated apple and pear with chia seeds, maple syrup, vanilla, and coconut oil. The batter uses oat bran, almond and coconut flours, baking powder, and cinnamon for structure and flavor. Baked until lightly browned, the cookies have a moist, soft texture resembling muffins rather than firm cookies, making them a gentle sweet treat with natural fruit sweetness.

Description

The recipe blends fresh grated apple and pear with chia seeds, maple syrup, vanilla essence, and melted coconut oil to create a moist fruit base. Dry ingredients include oat bran, almond flour, coconut flour, baking powder, and cinnamon, which are mixed and combined with the fruit mixture to form a thick batter. The use of gluten-free flours and natural sweeteners aligns with vegan and gluten-free dietary preferences.

Cookies are shaped by spoonfuls placed on a lined baking sheet, then baked at 350 degrees Fahrenheit for about 15 minutes until lightly browned. Unlike traditional crisp cookies, their texture is more muffin-like and soft, due to the fruit and flour blend.

These cookies can be enjoyed as a wholesome snack or breakfast option. They store best in an airtight container and remain fresh for a couple of days. Due to their softer texture, they do not hold shape if kept too long.

Ingredients

Servings
  • ½ apple (approx ½c)
  • ½ pear (approx ½c)
  • ½ tablespoon chia seeds
  • 2 tablespoon maple syrup
  • ½ teaspoon vanilla essence
  • 2 tablespoon coconut oil , melted and cooled
  • ¼ cup oat bran 28g
  • ½ cup almond flour 41g ground almonds
  • ½ teaspoon baking powder
  • 1 tablespoon coconut flour
  • ½ teaspoon cinnamon

Instructions

  1. Preheat oven to 350F/175C and line a baking sheet/tray.
  2. Peel the apple and pear and remove core. Coarsely grate both into a bowl and add the chia seeds, maple syrup, vanilla and coconut oil. Mix well.
  3. In a bowl, mix together the oat bran, almond flour, baking powder, coconut flour and cinnamon. Add the apple mixture and mix well.
  4. Take tablespoonfuls and place on the lined baking sheet. Round them off as they won't change shape as they cook.
  5. Bake for approx 15min, slightly longer if needed, until lightly brown. Allow to cool on a cooling rack.
  6. Store any that you don't eat immediately in an airtight container - they are more muffin-like than firmer cookies so only keep a couple days).
