Healthy Apple Pancakes

Healthy Apple Pancakes combine oats, egg whites, cottage cheese, and applesauce to form a thick batter enriched with diced apples and cinnamon. The resulting pancakes cook to tender, slightly fluffy cakes with a mild sweetness and warm spice accents. Topped with warm cinnamon apples and maple syrup, this breakfast offers a comforting and fruit-forward dish with a balanced texture between soft pancakes and tender cooked fruit.

Description

This recipe blends rolled oats, egg whites, full-fat cottage cheese, applesauce, baking powder, and cinnamon, processed to a smooth yet thick batter. Folding in diced apples introduces a fresh, fruity texture. Cooking pancakes on low-medium heat allows them to develop lightly firm edges while staying tender inside. Concurrently, additional diced apples are warmed with maple syrup and cinnamon to create a soft, sweet topping reminiscent of baked apples.

The pancakes are served stacked with the warm cinnamon apples atop, drizzled further with maple syrup and optional nut butter for richness. The oats and cottage cheese provide a hearty base with protein and fiber, while the fruit and spices lend natural sweetness and flavor complexity without being overpowering.

Egg whites can be substituted with whole eggs, and Greek yogurt might replace cottage cheese for a similar texture. Prepare pancakes and cinnamon apples in advance for meal prep, storing them separately in the fridge for up to five days. Reheating can be done in the microwave, toaster oven, or stovetop to retain texture.

Ingredients

Servings
  • cup rolled oats old fashioned
  • ½ cup egg white
  • ½ cup cottage cheese full-fat
  • ¼ cup applesauce
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ cup apples diced
  • maple syrup for topping

Cinnamon Apples

  • ½ cup apples diced
  • 2 teaspoons maple syrup
  • ¼ teaspoon cinnamon

Instructions

  1. Add oats, egg whites, cottage cheese, applesauce, baking powder and cinnamon into a blender and process until the batter is relatively smooth with a thick consistency.
  2. Gently, fold in diced apples.
  3. Heat pan or griddle to low-medium heat and spray with non-stick spray. Once hot, scoop out about a quarter cup of batter at a time and pour onto pan. You should be able to make about 8 small pancakes. Cook until little bubbles form and the edges of the pancakes are solid enough to put a spatula underneath. Flip the pancakes and cook for one to two additional minutes.
  4. While pancakes are cooking, prep cinnamon apples by adding diced apples, maple syrup and cinnamon in a microwave safe bowl. Stir to combine and microwave for 30-60 seconds or until apples are soft and look similar to baked apples.
  5. For serving, place four pancakes on each plate, top with warm cinnamon apples and drizzle with maple syrup and/or nut butter.

Notes

  • Two whole eggs can substitute for the egg whites if preferred.
  • Greek yogurt may be used instead of cottage cheese for a similar texture.
  • For meal prep, cook pancakes and cinnamon apples separately, storing in sealed containers up to 5 days.
  • Reheat pancakes using microwave, toaster oven, or stovetop for best results.
