Healthy Apple Pie Granola

Seriously the best healthy apple pie cinnamon granola that's naturally sweetened with maple syrup and loaded with fresh apple chunks. The perfect breakfast and snack!

  • 2 ½ cups old fashion rolled oats gluten-free if needed
  • ½ cup walnuts chopped
  • 1 ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • cup red apple (about 1 red apple - I love Honeycrisp) peeled, cored, and cut into ¼ inch cubes
  • cup melted coconut oil
  • ¼ cup real maple syrup or honey
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 325°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine rolled oats, walnuts, cinnamon, nutmeg, salt, and cubed apples. Then, pour in the coconut oil, maple syrup and/or honey and vanilla on top. Then stir until all oats are completely coated.
  3. Spread the granola on the lined baking sheet in an even layer and press down using a spatula. The thinner the layer of granola, the crunchier it will be.
  4. Bake for a total of 22 - 28 minute. Stir the granola halfway (for extra-chunky granola, re-press the stirred granola down with your spatula). The granola may look underdone, but it will crisp up as it cools - trust me.
  5. Let cool for at least 20 minutes before breaking apart undisturbed! Once it is cooled, break it up into clusters. Store in an airtight container at room temperature for 1 week, or in a sealed freezer-safe bag in the freezer for up to 3 months.

Notes

  • Nut-Free: Leave off the walnuts.
  • Apple: I used Honey Crispy, but your favorite type of apple will work too! Granny Smith apples tend to be tart, so I usually don't use them.
  • Walnuts: Can substitute for pecans, almonds, or any nut.
  • Storing & Freezing: Store in an airtight container at room temperature for 1 week, or in a sealed freezer-safe bag in the freezer for up to 3 months.
  • Nutritional information is calculated for ¼ cup of granola.
