Best ever crispy homemade granola. Made with simple and clean ingredients, this nutritious, no oil granola is the ideal breakfast, healthy snack, or late night treat. Tastes like a chocoalte chip cookie and perfect for meal prep.

Ingredients
- 2 cups rolled oats
- ½ cup shredded coconut
- ⅓ cup pecans chopped
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ⅓ cup maple syrup or honey
- ¼ cup almond butter
- 2 teaspoon vanilla extract
- ⅓ cup mini chocolate chips
Instructions
- Preheat oven to 325F. Line baking sheet with parchment paper.
- In a large bowl, combine oats, shredded coconut, pecans, cinnamon, and salt.
- In a smaller bowl, combine maple syrup, almond butter, and vanilla extract. Microwave for 20 seconds and pour over dry ingredients. Stir until all oats are completely coated.
- Next spread the granola on the lined baking sheet in an even layer and press down using a spatula.
- Baked for 18 - 22 minutes, until golden brown. Stir granola halfway through and make sure to press down into a flat layer again after mixing. Granola will further crisp up as it cools.
- Let cool for at least 20 – 25 minutes before breaking apart. Add in mini chocolate chips.
- Store in an airtight container for 7 - 14 days.
Notes
- Can substitute pecans for walnuts, almonds, or any nut.
- Can substitute almond butter for peanut butter, cashew butter, or sun butter. However, this will change the taste.
- Can use honey instead of maple syrup.
