Healthy Applesauce Muffins

Healthy Applesauce Muffins offer a tender texture and gentle sweetness from applesauce, coconut sugar, and maple syrup. Enhanced by apple pie spice and a cinnamon-sugar sprinkle, these muffins provide warm flavor and moist crumb. They make a practical, make-ahead breakfast or snack option, easy to store and freeze to maintain freshness.

Description

The Healthy Applesauce Muffins combine all-purpose or gluten-free flour with coconut sugar, baking soda, apple pie spice, and salt for the dry ingredients. Wet ingredients include unsweetened applesauce, pure maple syrup, eggs, and vanilla. The batter is mixed gently and divided into muffin cups, topped with a cinnamon and sugar mixture before baking. The muffins bake at 350°F for 22 to 25 minutes until a toothpick comes out clean. The applesauce provides moisture and natural sweetness, contributing to a soft and tender crumb while the apple pie spice adds warm aromatic notes. The optional cinnamon-sugar topping adds a subtle crunch and extra sweetness.

These muffins can be baked ahead of time and stored at room temperature for 2 to 3 days with paper towels to absorb moisture, keeping them from getting soggy. They freeze well after removing liners, placed initially on a baking sheet to freeze individually, and stored for up to 4 to 6 months. To reheat, thaw in the refrigerator or warm briefly in the microwave.

Ingredients

Servings
  • 2 cups flour all purpose or a gluten-free 1-to-1 blend
  • ½ cup coconut sugar
  • 1 ½ tsp. baking soda
  • 1 - 1 ½ tsp. apple pie spice to taste*
  • ½ tsp. salt
  • 1 cup applesauce unsweetened
  • cup pure maple syrup
  • 2 egg room temperature
  • 1 tsp. vanilla
  • 1 Tbsp. sugar optional
  • tsp. cinnamon optional

Instructions

  1. Preheat oven to 350°F.
  2. Mix together flour, coconut sugar, baking soda, apple pie spice, and salt in a medium-sized bowl. Whisk together applesauce, maple syrup, eggs, and vanilla in a separate large bowl. Add dry ingredients to wet ingredients. Mix by hand until just combined.
  3. Place muffin cup liners into 12 cavities of a regular-sized muffin tray. Spray each liner with non-stick cooking spray. Evenly distribute the muffin batter into all 12 cups. They should end up being about ¾ full.
  4. Whisk together cinnamon and sugar in a small bowl and sprinkle ¼ teaspoon over each of the muffins.
  5. Bake muffins in preheated oven for 22-25 minutes, or until a toothpick when inserted in comes out clean. Let cool to room temperature before serving. Enjoy!

Notes

  • Prepare muffins a day ahead to save time and maintain freshness.
  • Store muffins with paper towels in an airtight container to prevent sogginess for up to 3 days.
  • Freeze muffins without liners in a single layer before bagging; store up to 6 months.
  • Reheat frozen muffins by thawing in the fridge or microwaving in 20-second increments.
