Healthy Balsamic Glaze Recipe

This Healthy Balsamic Glaze reduces balsamic vinegar down to a thick, syrupy consistency that is slightly sweet when honey is added. It offers a concentrated, tangy flavor perfect for drizzling over salads, grilled vegetables, meats, or cheese. The recipe uses simple ingredients and stovetop simmering to achieve a versatile finishing glaze usable in many dishes.

Description

The Healthy Balsamic Glaze is made by simmering balsamic vinegar with optional honey until reduced by half, thickening as it cools. This concentration intensifies the vinegar's natural sweetness and acidity, yielding a rich glaze ideal for enhancing flavors in savory or sweet applications. The simmering is done uncovered to allow evaporation and careful monitoring to prevent over-thickening.

The glaze can be stored at room temperature in an airtight container for about a week or refrigerated for one to two months. It should be brought back to room temperature before serving if chilled, to ensure pourable consistency. The recipe serves as a straightforward way to add depth and brightness to dishes without extra calories or artificial additives.

The quality of balsamic vinegar influences the final flavor, so using Modena balsamic vinegar is recommended. The glaze’s thickness will increase as it cools, so timing and attention during reduction are important to achieve the right texture.

Ingredients

Servings
  • 1 cup balsamic vinegar of Modena
  • 1-2 tablespoons honey optional

Instructions

  1. Add balsamic vinegar and sweetener, if using, to a medium-sized saucepan. Bring ingredients to a boil over high heat and then reduce heat to maintain a strong simmer.
  2. Simmer uncovered for 12-15 minutes, or until the balsamic vinegar has reduced by ½. (This can take considerably longer if reducing more than 1 cup of vinegar.) The balsamic glaze will continue to thicken as it cools.
  3. Once it comes to room temperature, drizzle over your favorite foods or store in an airtight container for up to 6 months in the pantry.

Notes

  • Allow the glaze to cool completely before storing to preserve texture and flavor.
  • Store the glaze in an airtight jar at room temperature for up to 1 week or in the refrigerator for up to 2 months.
  • Bring chilled glaze to room temperature before serving to ensure it pours smoothly.
  • Adding honey is optional; it mellows acidity and adds sweetness.
