The Healthy Banana Bread recipe uses three mashed bananas combined with whole wheat flour, ground cinnamon, baking powder, and baking soda to create a well-leavened loaf.   • butter for greasing the loaf tin
  • 200 g whole wheat flour
  • 0.5 tablespoon ground cinnamon
  • 0.5 teaspoon baking powder
  • 100 g walnuts roughly chopped
  • 0.5 teaspoon baking soda
  • 3 banana mashed
  • 1 banana halved lengthways
  • 3 tablespoon maple syrup
  • 2 egg
  • 5 tablespoon Greek yogurt 0% fat free
  • 100 ml skimmed milk
  • 50 g dark chocolate chips

Instructions

  1. Preheat your oven to 180°C/160°C(fan)/350°F/Gas Mark 4.
  2. Put 3 Bananas a bowl and mash until smooth.
  3. In a bowl or mixer, add the mashed banana, 3 tablespoon Maple syrup, 2 Eggs, 5 tablespoon 0% Fat Free Greek yogurt and 100 ml Skimmed milk and whisk until mixed together well.
  4. Add 200 g Whole wheat flour, 0.5 tablespoon Ground cinnamon, 0.5 teaspoon Baking powder and 0.5 teaspoon Baking soda and mix well.
  5. Add 100 g Walnuts and 50 g Dark chocolate chips and pulse until lightly mixed together.
  6. Grease a 2lb loaf tin with a little Butter.
  7. Top with 1 Banana (halved).
  8. Put the loaf into the oven and bake for an hour. Leave to cool before removing from tin.

Notes

  • You can bake the batter in a muffin tin for banana muffins; bake for about 25 minutes.
  • Walnuts may be substituted with pecans or chopped peanuts based on preference.
  • Top slices with nut butter, jam, or homemade healthier Nutella for added flavor.
