Healthy Blueberry Banana Bread

This Healthy Blueberry Banana Bread mixes almond and oat flours with mashed overripe bananas and fresh or frozen blueberries for a moist loaf with gentle sweetness and a hint of cinnamon. Eggs and maple syrup add natural sweetness and structure, while baking powder and soda ensure rise. The texture is tender yet holds together well, offering a fruity, mildly spiced quick bread suitable for breakfast or snack.

Description

The Healthy Blueberry Banana Bread begins with mashed ripe bananas and whole eggs blended with real maple syrup and pure vanilla extract for flavor and moisture. Almond flour and homemade oat flour provide a gluten-free base, combined with ground cinnamon and leavening agents including baking powder and baking soda, plus salt for balance. Blueberries are folded in last, adding bursts of juicy flavor.

Baked at 350°F in a greased and lined bread pan for 50 to 60 minutes, the loaf develops a golden crust while remaining moist inside. The familiar taste of bananas pairs with antioxidant-rich blueberries and a subtle cinnamon warmth.

This bread is convenient for using ripe bananas and homemade oat flour, while notes recommend avoiding packed oat flour to prevent dryness. Leftovers keep well refrigerated for up to 5 days or can be frozen for several months after slicing.

Ingredients

Servings
  • 3 egg
  • 1 cup banana about 2 large bananas, mashed overripe
  • ¼ cup maple syrup real
  • 2 teaspoon vanilla extract pure
  • 1 cup almond flour spooned & leveled
  • 1 cup oat flour spooned & leveled, homemade
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup blueberries fresh or frozen

Instructions

  1. Preheat the oven to 350°F. Line and grease a bread tin with parchment paper.
  2. If you are making homemade oat flour: In a blender, add about 1.5 cups of rolled oats. Blend until the oats turn into a fine flour, about 20 seconds to 1 minute. Then measure 1 cup of flour.
  3. In a small mixing bowl, whisk together almond flour, oat flour, cinnamon, baking powder, baking soda, and salt. Set it to the side.
  4. In a large mixing bowl, whisk eggs, mashed bananas, maple syrup, and vanilla extract.
  5. Add in the dry ingredients and mix until completely combined. Fold in blueberries with a spatula and pour batter into the greased bread tin.
  6. Bake for 50 – 60 minutes, or until a toothpick comes out clean.
  7. Let the bread completely cool before slicing and enjoying!

Notes

  • Homemade oat flour can be made by blending rolled oats until fine; avoid packing store-bought oat flour to prevent dryness.
  • Use almond flour rather than almond meal for best texture.
  • Store finished bread refrigerated up to 5 days, or freeze slices in an airtight bag for up to 3 months.
