  • 3 large (225g) banana about 1 cup mashed, ripe
  • 1 cup (240g) almond butter unsweetened
  • 2 cups (180g) rolled oats
  • 3/4 tsp salt sea salt
  • 1 1/2 cups (150g) blueberries fresh

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a 9” x 9” baking pan with parchment paper. You can also use an 8” x 8” square pan but you will need to bake the bars slightly longer.
  2. Mash the bananas in a large bowl until they are creamy. Mix in the almond butter until the wet ingredients are well combined. If you’re adding vanilla extract, do so now.
  3. Add the rolled oats, ground cinnamon and sea salt (the dry ingredients) to the bowl with the wet ingredients and mix well until a thick, sticky dough forms. Gently fold in the blueberries.
  4. Transfer the blueberry mixture to the prepared baking dish and spread it into an even layer. If desired, press extra blueberries into the top of the bars.
  5. Bake on the center rack of the preheated oven for 20 to 25 minutes, or until the bars are slightly golden brown around the edges and feel firm when gently poked.
  6. Allow the bars to cool to room temperature before slicing and serving.

Notes

  • Store the bars in an airtight container in the refrigerator for up to 7 days to maintain freshness.
  • For longer storage, freeze the bars in a freezer bag for up to three months and thaw before eating.
  • You may add 1/4 cup maple syrup to increase sweetness or 1 teaspoon vanilla extract to enhance flavor.
