Healthy Buffalo Baked Chicken Breasts

Healthy Buffalo Baked Chicken Breasts are marinated in a buffalo-style sauce made of hot sauce, mayonnaise, honey, and spices, then baked until cooked through. The chicken stays moist and flavorful with a balance of spicy, smoky, and slightly sweet notes. Leftover sauce is used as a glaze to enhance the finish before serving.

Description

This recipe requires pounding chicken breasts evenly for uniform cooking. The buffalo sauce merges hot sauce, mayonnaise, honey or maple syrup, smoked paprika, garlic and onion powders, chili powder, and kosher salt to create a well-rounded marinade. After a thirty-minute marination at room temperature, the chicken is baked at 375°F until it reaches an internal temperature of 165°F, ensuring safety and juiciness.

After baking, the reserved sauce is brushed on the chicken breasts, which then rest for ten minutes to absorb the flavors. This method keeps the crust tender and adds a fresh buffalo glaze. Serving options include celery sticks and blue cheese crumbles or dressings, complementing the classic buffalo flavor profile.

Using a meat thermometer is recommended for accuracy. Hot sauce substitutes and swapping honey for maple syrup allow flexibility in flavor and ingredient availability. Patience in resting the chicken enhances tenderness and helps retain moisture.

  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt

  2. To the bowl with the buffalo sauce, add the chicken breast and stir it to completely coat.
  3. Allow the chicken to marinate over the counter for 30 minutes.
  4. Meanwhile, preheat your oven to 375F. Transfer the marinated chicken to an oven-safe dish.
  5. Bake for 25-28 minutes, or until the internal temperature reads 165F.
  6. Once the chicken is done transfer to a platter and brush with the reserved buffalo sauce.
  7. Allow it to sit for 10 minutes before slicing it.

Notes

  • Check that the internal temperature of the cooked chicken reaches at least 165°F using a meat thermometer for safety.
  • Serve with celery sticks and blue cheese crumbles or ranch or blue cheese dressing to complement the buffalo flavor.
  • You may substitute the hot sauce in the buffalo sauce with any preferred brand or variant.
  • Maple syrup can replace honey as a sweetener in the buffalo sauce if desired.
  • Allow the baked chicken to sit for 10 minutes after brushing with reserved sauce to let flavors settle.
