Ingredients

  • 4 cups chicken can use rotisserie, canned, grilled, Basic Shredded Chicken, etc, shredded
  • 1 red bell pepper finely diced, 130g
  • 4 celery finely diced, stalks
  • 1/2 red onion finely diced, 120g
  • 2 carrot finely diced, small, 120g
  • 1/3 cup buffalo sauce
  • 1/3 cup mayonnaise or Greek yogurt, light
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large mixing bowl, add all the ingredients. Fold until all ingredients are mixed thoroughly.
  2. Taste and add any salt and/or pepper to taste.
  3. Serve as a sandwich, on toast, in a wrap or lettuce wrap, over a bed of greens or enjoy as is!
