Ingredients
- 4 cups chicken can use rotisserie, canned, grilled, Basic Shredded Chicken, etc, shredded
- 1 red bell pepper finely diced, 130g
- 4 celery finely diced, stalks
- 1/2 red onion finely diced, 120g
- 2 carrot finely diced, small, 120g
- 1/3 cup buffalo sauce
- 1/3 cup mayonnaise or Greek yogurt, light
- salt to taste
- black pepper to taste
Instructions
- In a large mixing bowl, add all the ingredients. Fold until all ingredients are mixed thoroughly.
- Taste and add any salt and/or pepper to taste.
- Serve as a sandwich, on toast, in a wrap or lettuce wrap, over a bed of greens or enjoy as is!
