Healthy Caesar Dressing without Anchovies
Description
The dressing comes together by whisking plain Greek yogurt with extra virgin olive oil, freshly squeezed lemon juice, and pickle juice, which replaces traditional anchovy brininess with a mild acidity. Dijon mustard adds depth and slight pungency, while minced garlic and freshly cracked black pepper provide aromatic notes. Salt is optional depending on taste.
The resulting dressing has a balanced tangy and creamy texture making it suitable for classic Caesar salads or as a versatile salad topping. The absence of anchovies makes it more approachable for those avoiding fish flavors but retains the classic Caesar profile through other ingredients like mustard and garlic.
This homemade dressing can be stored in the refrigerator for up to six days in an airtight container and tastes best after resting briefly to allow flavors to meld. Adjust lemon, pepper, or salt to personal preference before serving.
For vegan adaptations, substitute the Greek yogurt with a combination of tahini and hummus or dairy-free yogurt alternatives.
Ingredients
- ⅔ cup Greek yogurt I used Chobani 0%, non-fat, plain
- 1 - 2 tablespoon extra virgin olive oil
- 2 tablespoon lemon juice about ½ a lemon, freshly squeezed
- 2 tablespoon pickle juice I used Kosher Dill
- 1 tablespoon Dijon mustard
- 2 - 3 large garlic minced, cloves
- ¾ teaspoon black pepper freshly ground
- ¼ teaspoon salt optional
Instructions
- Prepare the dressing by whisking all the ingredients together in a small mixing bowl. Start with 1 tablespoon of olive oil; you can add another after whisking if you want a “richer” dressing.
- Taste & adjust seasonings by adding salt, more pepper, or a squeeze more of lemon juice.
- Store in an airtight container in the fridge for up to 6 days. I love it with this crispy salmon caesar salad or this chicken caesar pasta salad!
Notes
- Use plain Greek yogurt without added flavors; 0%, 2%, or 5% fat works depending on preference.
- Dijon mustard is key for classic Caesar flavor despite being mild in taste.
- Store the dressing in an airtight container in the fridge for up to six days and stir well before using.
- For a vegan alternative, replace Greek yogurt with a mix of tahini and hummus or dairy-free yogurt.
