Description

This sandwich begins with Dave's Killer Bread Organic English muffins toasted to a golden crisp. One half of each muffin is brushed with flaxseed or olive oil, while the other half is spread with ripe mashed avocado. Fresh mozzarella slices and tomato rounds are layered atop the avocado, then drizzled with balsamic glaze and seasoned with salt and freshly ground black pepper.

A cooked egg—whether fried, scrambled, poached, or hard-boiled—tops the vegetables, followed by thin slices of prosciutto and torn fresh basil leaves. The other muffin half completes the sandwich. The layering combines creamy avocado, mild mozzarella, juicy tomato, and savory prosciutto with the richness of the egg, harmonized by the sweet tang of balsamic glaze and herbal basil notes.

  • 6 English muffins Dave's Killer Bread Organic
  • flaxseed oil or olive oil
  • 2 avocado mashed
  • 18 mozzarella cheese slices, fresh
  • 3 tomato sliced
  • balsamic glaze
  • salt Kosher salt and freshly ground
  • black pepper Kosher salt and freshly ground
  • 6 egg fried, hard boiled, scrambled, poached, or cooked to your liking
  • 12 lices prosciutto
  • ½ cup basil fresh leaves

Instructions

  1. Toast the English muffins. For each English muffin sandwich, drizzle one half of the English muffin with flaxseed oil or olive oil. Spread 1-2 tablespoons of the mashed avocado on the other side of the muffin then layer with 2-3 slices of mozzarella, 3 slices of tomato, and drizzle with the balsamic glaze and sprinkle with kosher salt and pepper. 
  2. Top with one egg and the prosciutto and sprinkle with fresh torn pieces of basil leaves. Top with the other English muffin half. Serve warm, chilled, or at room temperature.  

Notes

  • Make sandwiches ahead, wrap tightly in plastic wrap, and refrigerate for up to 3 days for easy meal prep.
