Healthy Caramel Popcorn Recipe
Description
The Healthy Caramel Popcorn Recipe starts with popping popcorn kernels in coconut oil to achieve a crisp and light base for the snack. The caramel sauce is made from maple syrup, coconut oil, sea salt, and vanilla, which is boiled briefly to blend and concentrate its flavors. After popping, the popcorn is evenly coated by drizzling the warm caramel mixture over it, then cooled on parchment paper. This method creates a crunchy, slightly sweet coating infused with vanilla and a hint of salt that contrasts the natural popcorn flavor.
The popcorn’s crisp texture combined with the smooth, sticky caramel layer makes it a satisfying snacking option that’s carefully sweetened with natural ingredients instead of refined sugar. The maple syrup adds a deep, mild sweetness, while the vanilla enhances the overall flavor complexity. Cooling the popcorn on parchment helps set the caramel and prevents sticking.
This snack is best enjoyed fresh but can be stored for later munching. It’s a straightforward recipe that highlights the natural taste and texture of popcorn enhanced by a homemade caramel glaze, making it suitable for those wanting a less processed treat.
Ingredients
- 3 tablespoons coconut oil divided
- 1/2 cup popcorn kernels
- 1/4 cup maple syrup
- 1/2 teaspoon salt sea salt
- 1 tablespoon vanilla
Instructions
- Place 1 tablespoon coconut oil into a deep pot or pan with a tight-fitting lid and melt over medium-high heat. Add in popcorn kernels and cover. Shake the pan back and forth every 20 seconds or so to heat kernels evenly. After about 2 minutes, kernels should start to pop. Once popping slows, remove popcorn from heat and pour into a large bowl.
